Summer is fast approaching which means BBQ time is too! Horray! And what is everyone’s favourite BBQ meal? A burger, of course. When I first had this burger I thought it was real meat pulled pork! I honestly couldn’t tell the difference. I’d never heard of jackfruit before but after doing some research learned it is from a species of tree in the fig, mulberry, and breadfruit family, which is found within the region between the Western Ghats of southern India to the rainforests of Borneo. So interesting! Thankfully, you don’t have to buy a whole jackfruit as many supermarkets sell already pulled/shredded jackfruit packets. Mix with some BBQ sauce, heat up and you’re done.
3. Mexican Bean Burger with Lime Yogurt and Salsa
A bean burger is your kind of classic and staple vegetarian burger and can be pretty basic, however, this recipe spruces up the timeless favourite. Made with Mexican kidney beans, chilli, and coriander this burger certainly is flavoursome with a kick! The best thing about this meal is that it goes with many sauces, fillings and side dishes. Whether you want a health kick with an avocado topping or not-so-healthy cheesy fries, it’ll work!
4. Veggie Mushroom Burger
If you’re after something similar to a beef burger or pattie then a mushroom burger is definitely for you. It’s the closest supplement to the real thing there is. I was really skeptical since I dislike mushrooms but I can truly say it doesn’t taste or have the texture of them and is very yummy. This recipe does take a while to prepare but afterwards, just simply mix all the ingredients together and fry. My mouth is watering just thinking about it!
5. Veggie Packed Quinoa Burgers
Quinoa is another popular trend at the moment and is seriously healthy! Rich in protein, dietary fiber, and B vitamins. Plus it’s gluten-free. Woo! Quinoa can be eaten on its own and is commonly used in salads but is a great ingredient for making veggie burgers. The burger has a golden and crispy exterior but is moist inside. Perfect! Combine the quinoa with cottage cheese, eggs and flavourings, then bake and serve with vegetables of your choice.
