3. Chicken Provençal
This hearty recipe will take a few hours to marinate, so it is definitely not one of the chicken dishes to make if you are in need of a quick meal – but if you have the time, this dish is totally worth it. To make this dish, you will need around 2 1/2 kilograms of chicken – so you might want to visit the butcher at your local supermarket. First, place the chicken into a large bowl and add garlic, wine, oil, and thyme before seasoning with salt. Chill overnight in the fridge. The next day, char some plum tomatos in the grill and then fry the chicken until it has a golden cripsy batter. Add the tomatoes and simmer. Once that is done, heat in the oven for an hour. Let it settle for 15 minutes and then serve!
4. Salina Chicken
This dish takes its inspiration from the flavours of the island of Salina. You will need aubergines, garlic cloves, red chillies, cinnamon, baby capers, red onion, cherry tomatoes, pine nuts, lemons, and basil. It is a very flavoursome dish! To create the dish, you will first want to shallow fry your chicken. You should then stir fry your vegetables and other ingredients. Cook them for fifteen minutes. Put everything into a tin and cook for 45 minutes on the bottom shelf of the oven. This delicious dish can be served with rice or a fragrant couscous.
5. Chicken Pot Pie
If you hail from the UK, chicken pot pie might be one of those chicken dishes you have only ever heard about in American sitcoms – but it time it made its way across the pond! Taking only half an hour to make, it makes a perfect quick dinner. All you need for this is some chicken thighs, two onions, mushrooms, some thyme, and a block of puff pastry. Cook two-thirds of the thighs in the oven for 6 minutes with some onions. Toast the mushrooms for 4 minutes in a pan. Roll out the pastry so it is bigger than the pan, then place it over the filling and push it into the edges. Bake on the bottom shelf of the oven for fifteen minutes.
6. Stuffed Jollof Chicken
If you are looking for a way to make your Sunday roast more interesting, look no further than this African-inspired dish. To create the jollof stuffing, you will need groundnut oil, sweet potato, unsalted butter, an onion, long grain white rice, garlic cloves, ginger, plum tomatos, and a line. Make it by first heating the butter in a saucepan, adding the onion and cooking until soft. Add the rice and stir for a minute before adding water and bringing to the boil. Boil until the surface of the rice looks ‘pitted’, then turn the heat down very low and simmer. Transfer the mix to a bowl and leave it to cool. Heat the groundnut oil in a frying pan and cook the sweet potato. Add garlic and ginger and cook for another 2 mins, before adding the tomatoes and seasoning the dish. Cook until the vegetables are soft and tender then leave to cool. Mix this half of the stuffing in with the half you made earlier. Season the chicken inside, then spoon the rice stuffing right down into the cavity then roast for an hour and twenty minutes.
7. Chicken Souvlaki
