How To Make Homemade Avocado Ice Cream

Avocados and ice cream might sound like a bizarre mix, but this combination actually makes for a sweet, decadent ice cream that has a wonderful texture and flavour. If you’re willing to try something adventurous, why not try some homemade avocado ice cream? It all comes together in a few easy steps, and can be adapted if you don’t have an ice cream maker.

1. Gather your ingredients

To make homemade avocado ice cream you will need: vanilla pods, sugar, lime, lemon, ripe avocados and whole milk. Make sure you really make the effort to look for ripe avocados, as these will make or break the texture (and colour) of your ice cream.

2. Make your syrup

It all starts with a simple syrup. Simply heat up two vanilla pods (make sure to scrape out the beans first and add them to your pot) with 200g of sugar and the zest and juice of one lemon and one lime. Heat this mixture up and stir until it becomes a clear liquid. Leave the mixture to cool and remove the vanilla pods.

3. Blend your avocados

Use a blender to blend up your peeled and de-stoned avocados until they are of a smooth consistency. You should blend until there aren’t any chunks or lumps left, almost as if you were making a smoothie. Once smooth, add in your cooled syrup plus 500ml of whole milk.

4. Freeze and/or churn your ice cream

If you have an ice cream maker, follow the the appliance’s instructions on how to churn your ice cream until frozen. If not, you can transfer your mixture to a metal container and pop it in the freezer. If you choose the second method, you must whisk your ice cream mixture every half hour until smooth.

5. Add the extras

While avocado ice cream is great on its own, it can be made even better with some additions. For a fresher taste, add a sprig of mint. For extra sweetness, add a drizzle of condensed milk or some dark chocolate shavings.
