1. Summer Grilled Corn Salad

A colourful mixture of grilled corn, feta cheese, tomatoes and basil, it’s super easy to make and will certainly leave you drooling for more. 2. Raw Corn Salad with Tomatoes, Feta, and Herbs

If you don’t fancy spending time cooking your corn, you can just as easily take it off the cob raw. You could use these ingredients as the basis of a salad and bulk it up using a variety of different cooked beans, such as chickpeas, black beans, red beans, or even use olives instead. If you want to spice your dish up even more, you could add a dash or two of chilli, or some chilli flakes.
