It’s deadline season and if you’re anything like me or my friends you’re finding it increasingly difficult to keep your head above water, so here are 5 comfort food recipes for when you just have too many deadlines. Whether you want to cook, order-in or just heat up something, I’v sure there’s something here that will fit the bill just for you.
1. Mac n Cheese
Carbs and cheese. When you have that 4000-word essay due any moment and you just want to go home what better recipe to help you out. Warm macaroni smothered in warm cheese-y sauce and with a crisp, golden crumb topping. For extra warmth add in some paprika and black pepper and for extra taste add extra types of cheese (to personal preference). This can also be a whole dish or a side if you want a little something on the side like a steak of some chicken. There really aren’t that many ‘wrong’ ways to do Mac n cheese.
This really does take on the same basis as the last one: Mac n cheese. Pizza has all the carbs and cheese you could want, and also so many toppings that you can pick all of your favourite foods to take you away from the stress of those deadlines. Add in a stuffed crust and garlic and herb dip and you have all the makings of a wonderful night in. Stick your favourite movie on and you really are at the pinnacle of student luxury.
3. Loaded fries
Fries are great, we all know that. Chunky, skinny, skin-on, triple-fried, baked, potato, sweet potato, vegetable: there really is something for everyone. But how do we one-up the thing that has kept tummies hungry for hundreds of years already. Load them of course! These can be ordered in or made by yourself, but it’s basically your preferred fries, with chilli, or queso, or just about whatever you can imagine to make it the best food to snuggle up with during a study break ever.
4. Chicken Pie
Everyone I’ve spoken to has said that this is just one of ‘those’ dishes: you know the ones: they’re staples of childhood and mum always makes it on those cold winter nights when everyone is just a bit low. This is the most time-consuming to make on the list, but it will last for a few different meals and is worth all the time in the world (bonus: mum and dad will be super proud of your culinary skills). Extra-extra bonus: if you don’t want to make it you can buy one from about 50 variations at the ships so there really isn’t much pressure.
5. Jacket potatoes
Consider this loaded fries pre-fry. It’s healthier, so for people who are trying to stay aware of that there’s a definite bonus, and it’s also easier: chuck a potato in an oven, prepare a topping and in just over an hour you’ll have something to eat. You can also buy pre-baked potatoes in the freezer section if you don’t want to wait what feels like five years for you food (nothing is worse than an under-cooked baked potato).
So there are my 5 comfort dishes perfect for when deadlines are just getting a bit too much and you need a little pick-me-up. If I could summarise in just a couple of words: carbs and cheese. Let’s be real, they really are the way to go (and vegan and dairy-free cheese is also a thing for people who can’t have the dairy stuff!)
