5 Simple Christmas Cookie Recipes You Have To Try

One of the best things about the holiday season are the seasonal desserts. Christmas cookies are a classic way to celebrate the holiday season and enjoy a sweet treat. There are so many complicated cookie recipes out there that are difficult to perfect. However, going for a simple cookie recipe is the perfect way to celebrate the holiday season with friends and family. Here are some delicious cookies that you can bake with your loved ones this holiday season. 

Frosted Peppermint Brownie Cookies

Chocolate and peppermint are a classic Christmas cookie combination, and these cookies are the best of both worlds. For this cookie recipe, you’ll need 1/2 cup of unsalted butter, diced into 4 pieces, 1 cup of semi-sweet chocolate chips, 2 ounces of chopped unsweetened baking chocolate, 1 1/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 2 large eggs, 1 large egg yolk, 2/3 cup of brown sugar, 1/3 cup of granulated sugar, 1 teaspoon of vanilla extract and 1/4 teaspoon of peppermint extract. Start off by combining your chocolate chips, unsweetened chocolate and butter in a microwave safe bowl and melt in your microwave until smooth. While you set this mixture aside, combine your flour, baking powder and salt in a separate bowl and set aside as well. From here, whip together eggs, egg yolk, brown sugar and granulated sugar using an electric hand mixer set on medium-high speed, until pale, fluffy and creamy. Afterwards, mix in your vanilla extract, peppermint extract and melted chocolate mixture. Mix your wet and dry ingredients together and set your mixture aside for 45 minutes. Preheat your oven to 325 degree fahrenheit and roll your batter into small balls, place them on a cookie sheet and bake for 10 minutes. While your cookies are baking, you’ll need to make your peppermint cream cheese frosting with 4 ounces of cream cheese, 4 tablespoons of softened unsalted butter, 1/2 teaspoon of peppermint extract, 2 cups of powdered sugar, and crushed candy canes for a topping. To start, whip your cream cheese and butter together with an electric stand mixer until fluffy, then add your peppermint extract. Frost your cookies after they have cooled and top with the crushed candy canes.

Buttery Toffee White Chocolate Macadamia Nut Cookies

These delicious and sweet cookies are a perfect choice for the holiday season. To make these cookies, you’ll need a 1/2 cup of softened butter, 1 1/4 cup of granulated sugar, 2 eggs, 1 teaspoon of vanilla extract, 1/4 teaspoon of butter flavoring, 2 1/4 cup of all-purpose flour, 1/2 teaspoon of salt, 1 teaspoon of baking soda, 1/2 cup of toffee bits, 1/2 cup of chopped roasted salted macadamia nuts, 1/2 cup of white chocolate chips and sea salt flakes. Start by preheating your oven to 350 degrees fahrenheit and lining a baking sheet with parchment paper. Then combine your butter and sugar with an electric mixer until smooth, and add one egg at a time, and the vanilla extract and butter flavoring until the mixture is well combined. In a separate bowl, mix together your flour, salt, baking soda, toffee bits, and macadamia nuts. Once combined, mix with your wet ingredients until a dough forms. Fold in your white chocolate chips and scoop your dough onto the parchment paper. Bake your cookies for 10-12 minutes or until cooked through.

Ginger Spiced Sugar Cookies

These cookies are the perfect variation on a classic cookie, with the ginger spice adding a bit of a holiday vibe to this recipe. For this cookie recipe, you’ll need 2 sticks of unsalted butter at room temperature, 1 1/4 cups of granulated sugar, 3/4 cup of powdered sugar, 3/4 cup of vegetable oil, 2 large eggs, 4 tablespoons of molasses, 1 teaspoon of vanilla extract, 1/2 teaspoon of powdered ginger, 1/4 teaspoon of cloves, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 5 1/2 cups of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1 teaspoon of salt. First, preheat your oven to 350 degrees fahrenheit and cream the butter and sugar together. Afterwards, add your oil and eggs to the mixture one at a time and mix until well combined. Beat in your molasses, vanilla, and spices and set your wet mixture aside. From here, whisk your flour, baking soda, baking powder, and salt together and add that to your wet ingredients until it makes a dough. Scoop your cookies onto your baking sheet and bake the cookies for around 8 minutes.

Eggnog Cookies

This simple Christmas cookie recipe adds a new variation on the classic holiday drink. For this festive recipe, you’ll need 1/2 cup of softened unsalted butter, 1/2 cup of granulated sugar, 1/2 cup of brown sugar, 1 large egg, 2 tablespoons of cream, 1 1/2 teaspoons of vanilla extract, 1 3/4 cups of all-purpose flour, 2 teaspoons of cornstarch, 1 teaspoon of baking soda, 1/4 teaspoon of salt, 3/4 cup of red, green, and white sprinkles, plus more for a topping. To start, preheat your oven to 350 degrees fahrenheit and line a baking sheet with parchment paper. Then beat your butter and sugar until fluffy, and add your eggs, cream and vanilla extract. Then add your flour, cornstarch, baking soda, and salt to the mixture and beat until it creates a dough consistency. Fold in your sprinkles and scoop your dough onto your baking sheet. Cover each cookie with the leftover sprinkles and bake for 8 minutes.
