There are so many delicious gluten-free cake recipes out there, and we've put together some of the most mouth-watering ones!

As with many people, I love carbs. It seems like all the best foods are crammed full of them, but if you’ve got cealiac disease, or are allergic to wheat, or (like me) are diabetic ingesting a large amount of carbs is the last thing you want to be doing. Which makes eating all those scrumptious carbohydrate-rich foods difficult. So why not have cake without the carbs? Here are 8 yummy gluten-free cake recipes!

1. Gluten-Free (and Vegan) Lemon and Poppy Seed Cake

Lemon and Poppy Seed has to be one of my absolute favorite cakes, but it’s pretty impossible to find one with no carbs in it. Thank god for this delectable recipe from Rhian’s Recipes that creates a moist and such a sweet cake that is sure to make anyone and everyone want to try it. The recipes include instructions for one big cake and little cupcakes so you can knock yourself out with the amount of deliciousness this recipe makes. 2. Gluten-Free Coffee and Walnut Cake

Coffee and Walnut Cake is a grower, but this lovely one from Becky Excell has a gorgeous rich flavor, gluten-free and for all those who’re lactose intolerant, this one is also dairy free! So if you’re not a fan of coffee cake, well, you will be after trying this one. It has a lovely, thick icing and is topped with fresh walnuts, but don’t think the recipes is hard. No way. Anyone can make this absolutely delicious cake and everyone absolutely should make it.

3. Gluten-Free Red Velvet Cake

There’s a lot of love/hate relationships with red velvet cake, and it always comes down to the cream cheese icing but make no mistake, this gluten-free wonder by Flippin’ Delicious will make you absolutely adore red velvet cake by the time you’ve finished one slice. It’s a really easy recipe to follow, and the creator coaches you every step of the way (even reminding you not to be scared of layers). You’ll feel like a bake-off champion once you’ve dished out this scrumptious gluten-free cake.

Brownies are a type of cake right? Either way they’re being included on this list because this recipe is an absolute treasure. They’re gooey, oozy and fudgey, and Kerry (the creator of the recipe) promises they can be whipped up in under an hour, so what’s not to love about these gluten-free brownies? 5. Gluten-Free Strawberry Cake

Now, I know what you’re thinking, strawberry cake isn’t a real type of cake. But when you’re gluten intolerant, you take any cake you can get. And this recipe is no exception. It’s a vibrant pink color and vibrant in taste, with the natural strawberry flavor (and color) hitting you instantly. It’s the perfect girly cake and the creamy frosting is just yum! You’ll believe that strawberry cake is a real cake when you’ve eaten this gluten-free wonder from Rhian’s Recipes.

6. Gluten-Free White Chocolate and Raspberry Flapjacks

Ok, so maybe these ones aren’t really cakes, but can you blame me for putting them in? This recipe from The Gluten Free Blogger gives great guidelines for what to buy in terms of oats if you have cealiac disease and gives brilliant alternatives in case oats really don’t agree with you. It is the perfect recipe if you love a bit of sweet with a bit of tart and looks absolutely stunning when finished, with the marble effect on top. Any cake lover would eat these fantastic gluten-free flapjacks up in a second.

I know everyone was probably waiting for this one and how could the list not include a chocolate cake? Well, this one is so chocolately, it’ll be like you didn’t even know what chocolate tasted like until you had this cake. The recipe from What The Fork gives you a dairy-free option as well which is great if you’re lactose intolerant and once done the cake looks so creamy and just yummy. They give you various choices for icing and really explain in detail how to put this cake together. And what makes it even better, well it’s gluten-free of course!

It might not be everyone’s favorite cake but at some point or another everyone has a had a craving for some good ole’ carrot cake and this gluten-free recipe from Divas Can cook will keep you coming back for more. It’s lovely and moist with a whole lot of natural ingredients including coconut and obviously carrots. Its fluffy texture is literally to die for and with the thick cream cheese frosting it’s a perfect balance but gooey and moist. Definitely have a crack at cooking this gluten-free carrot cake.
