10 Ways To Include Pumpkin In Your Daily Breakfast

Pumpkin doesn’t have to be saved until Halloween. Yes, it’s great fun to carve this seasonal vegetable into evil looking faces or whatever creative designs people go for these days, but pumpkin is also delicious to eat! It’s one of the most underrated vegetables in the squash family so we want to honour it by sharing 10 different ways you can incorporate it into your breakfast.

1. Pumpkin Smoothie

If you’re a lover of smoothies for breakfast, try this recipe which incorporates pumpkin and cinnamon – it will be your autumn favourite. It looks good, it smells good and it tastes good. What’s not to love?

2. Pumpkin Cookies

For those who enjoy a sweet, yet healthy breakfast, pre-prepare these deliciously crunchy oatmeal cookies to dip in your milk or tea in the morning. What a treat! This recipe also provides a link to a secondary pumpkin spice recipe (super easy) as this is a difficult ingredient to obtain and pops up in the majority of the following pumpkin based recipes.

3. Pumpkin Bread

Bored of your habitual morning toast? Maintain the bread element that fuels you for the day but with a pumpkin twist. You’ll need to pre-bake loaves ready to slice when you wake up, but you can toast them each morning to recreate the freshly baked effect! Alternatively, the bread is equally tasty untoasted, so opt for your preferred texture.

4. Pumpkin Muffins

If you like the texture of bread but would prefer something a bit sweeter at breakfast time, bake a batch of pumpkin muffins. They’re also great on the go if you snoozed your alarm one too many times…

5. Pumpkin French Toast

Keeping the traditional breakfast bread theme, French toast is always a popular choice. Pumpkinify it and whip up some pumpkin butter to scoop on top of your stack if you’re the ultimate pumpkin fan. It might be a little on the sickly side so perhaps make a batch to share with the family!

6. Pumpkin Pancakes

The pancakes are the same concept as the French toast – pumpkinify the traditional breakfast dish; stack them up; and lather on the maple syrup. I find that adding some bacon tends to tone down the sweetness of this dish if you’re more of a savoury person.

7. Pumpkin Scones

If you prefer a crumbly, bread-like texture rather than the moist muffin texture, try making these pumpkin scones for a classy breakfast. Eat them plain, with standard butter or the pumpkin butter suggested in the pumpkin French toast recipe.
