Brunch Recipes You Have To Make ASAP
Breakfast + Lunch = Brunch. AKA the best meal you could have. So whether you’re sipping champagne with your girls, snacking with your other half or getting some well deserved you time, here are some brunch recipes you have to make ASAP.
Mexican Breakfast Chilaquiles
Basically a fancy name for nachos!
Beat eggs with 1/4 teaspoon salt. On medium heat add oil in a pan and add eggs and gently scramble 3 to 4 minutes or until set. Transfer to a bowl and set aside. Add half of the chips, sprinkle with half of the cheese. Top with remaining chips and cheese, then eggs and jalapeños. Cook until cheese has melted and chips begin to brown. Remove from oven; top with avocado, pico de gallo, and cilantro. Serve with sour cream and lime wedges, if desired!
Gordon’s Eggs Benedict
A classic and delicious brunch meal.
Bring a deep saucepan of water to a boil (at least 2 litres) and add the vinegar. Break the eggs into 4 separate coffee cups or ramekins. Split the muffins, toast them and warm some plates. Swirl the vinegared water briskly to form a vortex and slide in an egg. It will curl around and set to a neat round shape. Cook for 2-3 mins, then remove with a slotted spoon. Repeat with the other eggs, one at a time, re-swirling the water as you slide in the eggs. Spread some sauce on each muffin, scrunch a slice of ham on top, then top with an egg. Spoon over the remaining hollandaise and serve at once.
French Toast Bacon Butties
A fancy twist on the simple bacon sandwich.
Whisk the eggs and milk with the sugar in a bowl. Soak the white sliced bread in the mixture. Heat 1 tbsp of the butter in a frying pan and fry two slices of the soaked bread on a low–medium heat until golden and crisp, about 3–4 mins on each side. Remove from the pan and sandwich 2 slices of bacon between the slices of french toast. Repeat with the remaining soaked bread to make the other sandwich. Serve with a dusting of icing sugar and a drizzle of golden or maple syrup.
Spinach and Ham Egg Bakes
Perfect for on the go or as part of a yummy meal.
Preheat oven to 375°F with the rack in the lowest position. Unroll pie crust and cut into 12 (4-inch) rounds. Fit rounds into a lightly greased 12-cup muffin tin, pressing up and slightly over sides of each cup. Chill 10 minutes. Meanwhile, whisk together eggs, half-and-half, spinach, ham, scallions, dill, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spoon into crusts, dividing evenly. Bake until puffed and set, 22 to 25 minutes. You can serve warm or eat cold later. Both are delicious!
Poached Eggs On Avocado & Feta Toast
Using classic avocado and a tangy cheese!
Fill a large saucepan with water, add the vinegar and bring to a hard boil over high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook for 2 1/2 mins. Meanwhile, in a small bowl, mash the avocado, feta, chili flakes and lemon juice, and season well with black pepper. Toast the bread. Pile the avocado and feta on the toast, then put a poached egg on top of each.
