How To Make Blueberry-Peach Cobbler Oatmeal

As you have heard time and time again, breakfast is the most important meal of the day. Trust us, it really is. Breakfast kicks off your metabolism, which means it helps you burn more calories throughout the rest of your day. If that’s not a good enough reason, you can read up on the several other reasons why its good for you right here. Now, just a regular bowl of oatmeal can be boring. It is packed full of nutrients, but can be equally as unappealing. If you’re one who loves sweet things for breakfast, then you’re going to love this blueberry peach cobbler oatmeal recipe. It is also insanely easy to make! We broke it down for you in three easy steps for you.

What you’ll need…

  • 1 cup steel cut oats
  • 1/2 cup blueberries
  • 1 small, diced peach
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • 2/3 cup water
  • 1/3 cup almond or coconut milk
  • 1 tbsp natural peanut butter (creamy or smooth, whatever your preference)
  • Optional: bee pollen, sliced almonds, unsweetened coconut shreds, cinnamon etc.

Step One: Get Saucy

The sauce is absolutely integral to making blueberry-peach cobbler oatmeal. It gives that decadent sweetness that you expect with a classic cobbler but with half of the guilt. The coulis takes some time if you want to do it right, so this is where you will want to get started when making your blueberry-peach cobbler oatmeal. So first thing first, you’re going to warm up a tablespoon of coconut oil on a small-to-medium saucepan over medium-high heat. After the oil has melted and has completely coated the pan, add your tablespoon of maple syrup and cup of blueberries. Reduce to low, and let it thicken. After you’ve de-pitted and diced your peach, and the blueberry coulis has thickened, toss it into the pan. Let the sauce simmer as you prepare your steel cut oats.

Step Two: Sow your oats

In a small pot, heat up a tablespoon of coconut oil. Once the oil has completely coated the pan, pour in your cup of oats until the oats are fragrant. In the same small pot, pour in your 2/3 cup of water and 1/3 of almond or coconut milk. Depending on how thick you like the consistency of your oatmeal, you may want to change the ratios of your liquid. Also if you want it creamier, add more milk than water to your mixture. Once it is boiling, pour in your cup of steel-cut 0ats and reduce to a simmer. It should take about 15 to 20 minutes for your oats to cook completely through.

Step Three: Eat ‘er up

Once your oats are fully cooked, it is time to combine your blueberry and peach coulis-type sauce with your oats! Pour over your blueberry-peach mixture into the pot where your steel-cut oats have been cooking, and mix thoroughly. If you are adding peanut butter to your oats, now is the time to incorporate it into your oatmeal. Once it is all mixed in, take it off heat and let it cool for a minute or two so it can rest. You should be left with about four servings, so all leftovers can be stored away in Tupperware to be eaten for another day. For when you are serving right away, feel free to add whatever toppings you want to it. We personally love adding a sprinkle of bee-pollen. The yellow flecks will pop in your bowl of oatmeal! Adding some cinnamon or nutmeg will also kick up the flavour to this oatmeal, too.
