Usually, autumn is the time where your schedule picks up and you get crazy busy. There’s not a lot of time to sit down and search for dinner ideas, so here’s a list of 7 ideas for each night of the week! All you have to do is go grocery shopping! I’ve already made and sampled these dishes and each one if super yummy. Be careful, they fill you up quick!
1. Harvest Chicken Casserole
This casserole has everyone’s favorites mixed in! It’s got chicken, sweet potatoes, rice, cranberries, almonds, and brussel sprouts all covered in chicken broth. And it only takes an hour for it to be on the table! This super delicious casserole has 6-8 servings, so bring a few friends to enjoy this dish with you!
2. Chicken Cacciatore Subs
These subs are the way to my heart! Instead of going to Subway for this kind of sub, make it at home! It only takes 25 minutes and only feeds 4, but you can always double or triple the recipe to accomodate your needs. There’s lot of veggies and protein in this dish, so eat up!
3. Chicken Fricassee
This recipe‘s description on the website literally says “the sauce is pure heaven – you’ll want to pour it over everything” and I completely agree. The chicken is super juicy and there are lots of veggies in this dish, too! It also has white wine added into the sauce (you can also have a glass while making it *wink*), which makes the sauce super good! It only takes 45 minutes to cook, so get eating!
4. Farro-and-Tomato Salad with Crispy Capers
This salad was an interesting choice for me, but after having that first bite, I knew I needed to include it in this list. In 20 minutes, you can have the best salad ever. You can mix in whatever other veggies you want to have, as well, or add a little bit more greens into it if you desire.
5. Roasted Vegetable Chili with Cornbread Biscuits
I’m a huge fan of chili to begin with, so when I saw this recipe, I knew I had to try it! It wasn’t too spicy, but you could always add in more spices if you like spicy foods like me. This chili has a bunch of veggies in it and the cornbread was a decent pairing (this can also be substituted for a yeast roll or other type of bread).
6. Crispy Chicken with Roasted Carrots and Couscous
This dish screams “autumn” to me! It’s super light, so you can enjoy the lemon-y flavors on the porch while enjoying the cool weather. You can cook the carrots however you want or add any other veggies to the dish, as well, which makes it your own unique dish. The couscous was an interesting choice (I don’t usually like couscous), but it complimented the chicken very well. It can always be substituted for rice, though, if you don’t like couscous at all!
7. Orecchiette with Pancetta, Pumpkin and Broccoli Rabe
Finally, a dish for all the pumpkin lovers out there! Paired with pasta and broccoli, this dish is super healthy and you can always add more veggies and spices to it if you want. I put a little more red pepper flakes on it and took out the pumpkin seeds and the dish was still so yummy. The pumpkin added so many flavors to it! This is now my favorite dish to make for my friends!
