5 Mug Recipes for Busy College Students at OU

Let’s be honest… Living in a dorm for two or more years can seriously wreak havoc on your body. Dining hall food and those late night drunchies will almost certainly cause a gradual increase in your weight. I’ve been there, and I know that dining hall food gets old. So when you’re tired of the meal plan or you just want a properly portion sized snack, test out one of these 5 simple microwave mug recipes!

1. Chocolate Chip Cookie in a Mug

  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1 tablespoon of firmly packed brown sugar
  • 3 drops vanilla extract
  • pinch of salt
  • 1 egg yolk
  • 2 1/2 tablespoons all-purpose flour
  • 2 tablespoons semi sweet chocolate chips

First melt the butter, then add salt, vanilla, sugars and mix thoroughly. Add egg yolk and flour. Add the chocolate chips and mix. Heat for 45 seconds to a minute, but don’t cook it past a minute!

2. Homemade Mac ‘n Cheese

  • 1 cup water
  • 3/4 cup macaroni
  • 1/2 cup choice of shredded cheese

Combine macaroni and water in a microwave save bowl. Begin to microwave for 4 minutes. Stir, and then continue to microwave until noodles are soft. This usually takes between 6 and 8 minutes. Add in cheese. If the cheese does not melt, microwave again for another 30 seconds.

 

3. Mug Pumpkin Pie

  • 3/4 cup pumpkin puree (I used canned, naturally)
  • 1/4 cup heavy cream*
  • 1 egg yolk
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • A pinch of ginger
  • A pinch of cloves
  • A pinch of salt
  • 1/2 teaspoon vanilla

Combine all the ingredients in your favorite large mug. If your mug is too small, use a microwavable bowl. Turn the microwave power down to 50% power. Cook for 6-8 minutes or until a knife (or toothpick) inserted comes out pretty clean. You could also try doing it at full power for less time. If you do that, I would start with maybe 2 minutes and then try every 30 seconds till it’s done. Cool in the refrigerator (or freezer) and top with whipped cream, or even toffee bits.

4. Blueberry Coffee Cake in a Mug

Cake:

  • 1/2 tablespoon butter
  • 1/4 teaspoon sugar
  • 1 tablespoon brown rice syrup
  • 2 tablespoons unsweetened applesauce
  • 3 drops of vanilla extract
  • 1/4 cup flour
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons blueberries

Streusel:

  • 1/2 tablespoon butter
  • 1 heaping teaspoon of flour
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon

In a coffee mug or cup soften 1/2 tablespoon of butter in the microwave for 5 seconds. Then stir in the sugar and brown rice syrup, mixing well. Add in the applesauce, vanilla, flour, baking powder, salt, stirring until just combined. Add in the blueberries and gently mix in to the batter.

In a separate bowl, combine all streusel ingredients with your finger, working the butter in to a sandy like texture (I left a few clumps to have some streusel chunks). Pour topping over the cake batter.

Cook cake in the microwave for 75 seconds. You don’t want to over cook the cake, but you want the top to be just set. Get your spoon ready and go to town!

5. Peach Cobbler in a Mug

  • 1 Tbsp butter
  • 3 Tbsp white cake mix
  • 1 – 2 pinches of cinnamon
  • 2 1/2 Tbsp milk
  • 1 (4 oz) diced peaches in light syrup

Place butter in a mug and melt in microwave. Meanwhile, in a small bowl whisk together cake mix and cinnamon then whisk in milk and stir until well blended. Pour mixture over melted butter in mug (don’t stir). Drain 2 Tbsp liquid from peaches (about 2/3 of the liquid. Discard or drink it) then pour peaches over top of cake mix (don’t stir). Microwave on 50% power for about 3 – 4 minutes (time may vary depending on each microwave oven and wattage). Allow to cool slightly (it will be ridiculously hot) then optionally top with vanilla ice cream and a light dusting of cinnamon.
