15 Yummy Snacks For When You Get The Midnight Munchies

Being stuck at home during this 2020 quarantine means crazy sleep schedules with all this free time we have. I mean, I sleep most of the day and am up most of the night because I don’t have a set schedule anymore, which means, I get the midnight munchies a lot and am always looking for a yummy snack. I never really know what to make and just stand in my kitchen staring at the contents of my fridge for about twenty minutes. If you are experiencing the same disappointing problem during the night, I might have some solutions for you!

Here are fifteen of the yummiest snacks you can make during the long hours of the night. There are some that are on the healthier end and there are some that are just so yummy it doesn’t matter whether they are healthy or not. I have provided ingredients and instructions on how to make some of them while others you can find at your grocery store. Enjoy!

1. Sweet Potato Chips

If you like any kind of potato, and I mean any kind, you’ll love these sweet potato chips. They are a super yummy and healthy alternative to regular potato chips and they are super easy to make. If you make a huge batch, you can save them to munch on for the next week!

Ingredients:

  • Sweet potatoes
  • Olive Oil
  • Salt (I usually use garlic salt to add some more flavor)
  • Paprika (optional)

Directions:

Preheat the oven to 400F and line a baking sheet with parchment paper. You can either peel or not peel the potatoes, then thinly slice the potato. Put the potato slices in a bowl and drizzle the olive oil over them. Add however much salt or garlic salt and any other seasoning you’d like to the bowl and mix together. Arrange the potato slices on the baking sheet. Bake them for about 10 minutes. Then, turn over each slice and bake for another 2-3 minutes.

2. Sriracha Fries

Alright, another potato recipe. Just by the way, my favorite food is potatoes. They come in all shapes and sizes and forms and they taste so good in any way they come! Here is another favorite, sriracha fries!! Fries is the yummy snack that I crave every night. Here’s how to make them:

Ingredients:

  • Russet potatoes
  • Oil (vegetable, olive, canola, etc.)
  • sriracha sauce
  • garlic powder (if you want garlic sriracha fries)
  • salt

Preheat your oven to 375F and grease a large baking sheet. Cut your potatoes into thin strips or wedges. Place your potato strips or wedges into a ziplock back. In a small bowl, mix together oil, sriracha sauce, and seasonings and then pour the mixture into the ziplock bag. Seal and shake the bag until all potatoes are covered. Then arrange potatoes on the baking sheet and bake for 20-25 minutes. Add some more sriracha sauce if you like them extra spicy!

3. Chicken Street Tacos

Street tacos are a classic meal, and yes they are a little surprising for the midnight munchies, but they are literally delicious at any time of the day. And I would argue for breakfast as well! The ingredients list is a little long, but they are super easy to make.

  • Garlic powder
  • Onion powder
  • Paprika
  • Cayenne
  • Salt
  • Boneless, skinless, chicken thighs
  • Olive oil
  • Diced yellow onion
  • Diced Cilantro
  • Diced Jalapeno
  • Juiced medium lime
  • Mini Corn Tortillas

Directions:

In a small bowl, whisk together garlic powder, onion powder, paprika, cayenne, and salt until combined and then season the chicken thighs. In a skillet, heat up olive oil on medium heat and then saute the chicken until cooked through and is a little brown. This should take about 8 minutes. Remove off heat and let cool for 10 minutes. Then, cut the chicken into bite-sized pieces and save for later.

In another bowl, mix together onion, cilantro, jalapeno, lime juice, and salt; this is your topping. In another skillet or griddle over medium heat, layer two corn tortillas on top of each other and warm tortillas on both sides. Do this with the desired amount of tortillas. Assemble the tacos and add whatever other toppings you would like, and you got yourself some yummy street tacos!

4. Apples and Peanut Butter

This snack is probably the healthiest one on this list. When you are looking for something sweet but not too fattening, this is the go-to snack. Super easy and does not create too much of a mess in the kitchen. It is pretty explanatory on how to make this snack. All you need is a spoon to smother the apple in peanut butter.

Ingredients:

  • Any kind of apple really (though I prefer Granny Smith Apples)
  • Smooth peanut butter

5. Grilled Cheese

Grilled cheese is the classic yummy snack for when you get hungry. It’s super easy and cost-efficient as you only need three ingredients! Unless you can’t have it without tomato soup, then, of course, it is four ingredients.

  • Bread (Sourdough is usually my go-to)
  • Butter
  • Cheddar cheese (or any cheese you want)

Directions:

Butter both sides of each bread slice. Place in a skillet over medium heat and let the sides brown. Slice the cheddar cheese and place it on one slice of the bread. Place the other slice on top and continue to cook until cheese is melted.

6. Bacon Jalapeno Nachos

Nachos is another great and easy midnight snack, especially if you have friends over. Nachos feed a ton of people and always hit the spot. These nachos are delicious and unique. If you love a little spice and bacon, try these nachos out!

  • Refried beans
  • Chopped pickled jalapenos
  • Chopped cooked bacon
  • Shredded Cheddar
  • Additional toppings of your choice

7. Chili Cheese Tater Tots

Here is another great recipe for when you got your pals over to hang out and you need some food. Tater tots are another amazing form of potato and matched with chili and cheese, the combo is unbeatable. Your friends will be asking for this recipe all night.

  • 1 A pound of frozen tater tots
  • 4 ounces of ground beef
  • Salt
  • 15-ounce can of chili beans
  • Warmed cheese sauce
  • Chopped scallions (optional)

Directions:

Bake tater tots as the frozen package directs. In a skillet over medium heat, cook ground beef until brown and season with salt. Stir in the can of chili beans and cook until warmed through. Spoon the beef mixture over the tater tots and top with warm cheese sauce and any other toppings you’d like to add.

8. Berry Almond Smoothie

Smoothies are a great midnight healthy snack and this one especially. This berry smoothie has such a yummy taste and it does not have any added sugars so it is very healthy. You could also add some protein powder to get your protein fix and make this your go-to yummy snack before or after your late-night work out routine.

  • All-purpose flour
  • Sugar
  • Unsweetened cocoa powder
  • Baking soda
  • A dash of salt
  • Milk
  • Oil
  • Vanilla extract
  • Chocolate chips

Directions:

Spray the bottom of a microwave-safe mug or coffee cup with cooking spray. Mix all of the dry ingredients together until blended. Then, add liquid ingredients until the mixture is smooth and runny. Add the chocolate chips and microwave for 70-90 seconds until cake is just set but with the top just slightly shiny still. Let the mug sit for a minute before eating as it will be hot.

Edamame is so yummy and actually a really healthy snack too. I know some people do not like edamame, but I think it works as a great midnight snack as it is a great source of protein. 12. Popcorn With Red Robbin Seasoning

This recipe is one from my own family cookbook. It is a little twist on regular popcorn and it is different than other kinds of seasoned popcorn. It is seriously the only kind of popcorn I’ll eat now. So, get out your air-popper, make this popcorn and go watch that movie you’ve been wanting to watch.

  • Popcorn kernels
  • Kernal Seasons Movie Theater Butter Topping
  • Red Robbin seasoning

Directions:

Pour popcorn kernels in air-popper. Turn on and wait for kernels to start popping. While the popcorn begins to fill your bowl, pour small amounts of the butter topping and Red Robbin seasoning on top and mix. This way it will get all throughout the popcorn and not just the top.

13. Quesadillas

The one suggestion my mom always gave me when I told her I was hungry was to make a quesadilla. Of course, a plain cheese quesadilla is good, but why not add some stuff to make it even more of a yummy snack!

Ingredients:

  • Diced chicken breast
  • Red or green bell pepper
  • White onion
  • Garlic powder
  • Black pepper and salt
  • Olive oil
  • Flour tortillas
  • Cheddar cheese (or a cheese of your choosing)

Directions:

In a skillet, heat olive oil over medium heat. I usually cook the bell peppers a bit longer so they soften up a bit, but you can cook the chicken first. Season chicken with salt, pepper, and garlic powder then add to the skillet with the onion and bell pepper. After all is cooked, set aside. In another skillet, add a small amount of olive oil and then place a flour tortilla in the skillet. Spoon the chicken, bell pepper, and onion into the tortilla. Cover with cheese and then fold tortilla in half. Repeat with the desired amount of quesadillas and enjoy!

14. Coconut Toast

I had never heard of coconut toast before this, but I think it sounds absolutely amazing! I am a big coconut fan and this seems like a great midnight snack when I am craving something sweet. They are also super easy to make!

Ingredients:

  • Bread (any kind you’d like)
  • melted butter
  • sugar
  • vanilla
  • flaked coconut (sweet)
  • A beaten egg

Mix together butter, sugar, vanilla, flaked coconut, and egg in a bowl. Slather the bread with the yummy mixture and line a baking sheet. Place in a 350F oven for 15-20. The bread should be lightly browned. I hear this tastes like coconut pie.

15. Sugar Cookies

I saved the best yummy snack for last! Nothing was better than an elementary school party when the teacher pulled these babies out. Literally the best cookie on the planet.
