Grilled Margarita Chicken with Marinade

  • 3-5 pounds boneless skinless chicken breast (washed and trimmed)
  • Zest of 1 lime (about 1 tablespoon)
  • Juice of 3 limes (about ½ cup)
  • Juice of 1 orange (about ¼ cup)
  • 1 jalapeño pepper, minced (seeded and de-veined to reduce heat)
  • 5 cloves garlic, minced or grated
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander seed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 ounces Cuervo Gold tequila
  • 1/4 cup extra virgin olive oil

Directions

Place chicken in a resealable gallon-size plastic bag. Set aside. Combine all ingredients, except chicken, in a small bowl or measuring cup.  Whisk to combine.  Pour the marinade over the chicken, seal, and refrigerate to marinate for 3-24 hours.  Turn chicken occasionally. Preheat grill to medium-high.  Place chicken on the counter for about 30 minutes to defrost slightly. Grill chicken about 4-5 min on each side, turning halfway to get great grill marks. Serve and enjoy. You can also cook this in the oven at 350 degrees Fahrenheit.  Pour off 1/2 of the marinade, add the chicken and remaining marinade to a 9×13” baking dish and bake 45-60 min until cooked through. Vietnamese Beef and Lemongrass One Pot

So much flavor compliments the beef, this one keeps it healthy, and all in one pot means easy, quick clean-up and more time with mom.

  • Oil
  • lean steak 600 g, diced
  • shallots 4, sliced 
  • lemongrass 3 stalks, 1 bashed but left whole
  • garlic 2 cloves, crushed
  • red chilies 2, chopped
  • kaffir lime leaves 3 
  • star anise 2 
  • vegetable stock 400 ml 
  • fish sauce 1 tbsp
  • lime 1, plus wedges to serve
  • coriander leaves to serve
  • jasmine rice or greens to serve

Heat the oven to 325 degrees Fahrenheit. Heat 1 tsp oil in an ovenproof pan with a lid. Season the steak pieces and fry in batches, scooping out once browned. Add the shallots, lemongrass, garlic, and chili to the same pan and cook until fragrant. Add lime leaves, star anise, meat, and cover with stock. Add the fish sauce. Put the lid on and put it in the oven for 1½ hours. (Remove the lid for the last 15 minutes to thicken the sauce if it’s too thin). Add the lime juice and season with more fish sauce as desired. Maple Bacon Salmon

  • 1 lemon, sliced
  • 1 (2 1/4-lb.) skin-on salmon fillet
  • 2 1/2 tsp. McCormick Himalayan Pink Salt, Black Pepper and Garlic All Purpose Seasoning, divided
  • 1 tbsp. Dijon mustard
  • 1/3 c. extra-virgin olive oil
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. maple syrup
  • Finely chopped chives, for garnish

For the candied bacon:

  • 3 tbsp. maple syrup
  • 1 tbsp. packed brown sugar
  • 1/4 tsp. McCormick Himalayan Pink Salt, Black Pepper and Garlic All Purpose Seasoning
  • 6 slices bacon

Preheat oven to 400 degrees Fahrenheit. Place lemon slices on the bottom of a 9×13″ baking dish and place salmon on top. Season salmon all over with 2 teaspoons Himalayan Pink Salt, Black Pepper, and Garlic All-Purpose Seasoning. In a medium bowl, whisk together mustard, oil, lemon juice, maple syrup, and remaining 1/2 teaspoon Himalayan Pink Salt, Black Pepper, and Garlic All-Purpose Seasoning. Pour sauce over salmon. Roast salmon until it flakes easily with a fork, 20 to 25 min. Turn oven to broil and broil until golden, about 3 min. In a small bowl, whisk maple syrup, brown sugar, and ¼ teaspoon of Himalayan Pink Salt, Black Pepper, and Garlic All-Purpose Seasoning. In a large skillet over medium heat, cook bacon until lightly golden on both sides, about 4 min per side. Drain fat. Return skillet to medium heat and pour the maple syrup mixture into pan. Add bacon and cook, turning slices frequently until liquid almost absorbed and bacon is glazed, 3 to 4 min. Using tongs, transfer bacon to a work surface to cool completely. Baked Rigatoni with Spinach, Ricotta, and Fontina

  • 1 pound rigatoni
  • 3 tablespoons olive oil 
  • 1 10-ounce package frozen spinach, thawed
  • 2 cups (about 1 pound) ricotta
  • 5 tablespoons grated Parmesan
  • 1/2 teaspoon grated nutmeg
  • 3/4 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 6 ounces fontina, grated (about 1 1/2 cups)

Directions:

Heat the oven to 450 degrees Fahrenheit. Oil a 9×13″ baking dish. In a large pot of boiling, salted water, cook the rigatoni until almost done, about 12 min. Drain. Put the pasta in the prepared baking dish and toss with 1 tablespoon of the oil. Meanwhile, squeeze as much of the water as possible from the spinach. Put the spinach in a food processor and puree with ricotta, 3 tablespoons of Parmesan, nutmeg, salt, and pepper. Stir in half the fontina. Stir the spinach mixture into the pasta. Top with the remaining fontina and Parmesan. Drizzle the remaining 2 tablespoons of oil over the top. Bake the pasta until the top is golden brown, 15 to 20 min. Directions:

In a medium-sized bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic. Reserve 1 cup sauce for basting. Add chicken thighs and sauce to a Ziploc bag and marinate at least 3 hrs or overnight. Grill chicken, covered, over medium heat for 6-8 min on each side or until no longer pink.
