Rice cake recipes? Yes they’re a thing. When you’re on a diet or trying to get fit, sometimes the cravings hit. Plus, they’re gluten free, vegan and only have 25 calories per piece. Here are ten easy rice cake recipes and topping combinations that will satisfy all your cravings!

1. Rice Cake Pizza

Use rice cakes as a healthier alternative for a pizza! Simply top with tomato sauce, cheese, and all your favourite toppings and bake in the oven until the cheese is melted. Once baked, the rice cakes will have a chewier, bread-like texture, just like pizza dough.

2. Peanut Butter & Fruit

Peanut butter and jelly sandwiches are a childhood classic. Make them healthier by swapping in rice cakes and real fruit. Simply spread peanut butter on a plain rice cake and top it with slices of any fruit you’d like — although berries and bananas work best.

If you’re looking for a healthy breakfast option, then swap your bagel for a rice cake and top it with all your favourites. Cream cheese, smoked salmon and chives will taste amazing on rice cakes and will make a very nutritious treat. You can even top everything off with an egg if you have the time!

4. Smashed Avocado

This is one of the simplest ways to dress up a humble rice cake. Using a fork, simply smash avocado onto a rice cake, then season it with salt, pepper and a drizzle of lemon and olive oil.

5. Tzatziki and Cucumber

Tzatziki is a classic Greek dip made of Greek yoghurt, garlic, dill and olive oil. You can make it yourself or purchase it ready-made at any supermarket. Simply spread it onto a plain rice cake to add a tangy flavour. To add a bit of extra crunch, top off the tzatziki with some thinly sliced cucumber.

6. Mozzarella, Tomato and Basil

Here’s a twist on an Italian appetiser known as bruschetta. Brush your rice cake with olive oil, add a slice of buffalo mozzarella, then top it off with some diced tomatoes seasoned with basil. This would also work great if you bake the rice cake with the cheese on it first, to let the mozzarella melt.

7. Pesto

Pesto is a super simple topping that will add tons of flavour to an otherwise bland rice cake. You can make your own pesto and choose the herb that suits you: basil is a classic, and parsley will give a slightly fresher taste. For some added texture, top your rice cake off with some crushed pine nuts.
