There are ten fast and easy vegetarian dinners you need to try this week! Since starting 2019, I started to cut meat out of my diet gradually. Now, I can proudly say I only eat meat around twice a week. Since I’ve cut meat out, I’ve had to find other alternatives. I’m not going to lie when I first cut out meat; it was hard for me to figure out alternatives. Now I can say that any meal the vegetarian option can do better. I’ve found ten seriously delicious vegetarian dinner recipes. They range from traditional American, Hispanic, Italian, and Oriental. Seriously, give these vegetarian recipes a try!
1. Lemony Collard Green Pasta
This is a unique and delicious vegetarian dinner. This is a great meal because it is a fresh and vibrant take on traditional pasta dishes. All you need is spaghetti, collard greens, pine nuts, olive oil, salt, pepper, red better flakes, lemon, and parmesan cheese.
2. Kung Pao Brussels Sprouts
One of my favorite Oriental dishes used to be Kung Pao chicken, but now I’ve found a great vegetarian alternative. Brussels sprouts are one of my favorite vegetables, and they come to life in this dish. This recipe is so easy all you need to do is roast the sprouts, make the sauce, and then broil the two together.
3. Homemade Falafel
I love falafel, and I’m so happy I found a recipe easy enough to make at home. There are a bunch of ingredients that go into this recipe, but it only takes 30 minutes to complete. Once you have your falafel made serve it in a pita with lettuce, tomato, lettuce, cucumbers, and yogurt sauce!
4. Grilled Veggie Pizza
Pizza is probably the easiest dish to turn vegetarian. Plus, it’s a simple dish to make in general. Make a veggie pizza with your favorite vegetables. For the crust, you can make it yourself, buy a pre-made crust, or (my favorite) use pita bread. I know I always use spinach, bell peppers, and zucchini!
5. Vegetarian Enchiladas with Butternut Squash and Black Beans
I am obsessed with Mexican food, and enchiladas are my favorite. These vegetarian enchiladas are as delicious as those with meat. What makes these unique is that they’re not only made with black beans they include butternut squash.
6. Stir Fry Vegetables Recipe
I’m a sucker for a good stir fry. This recipe is my favorite thing to make because it’s fast, easy, and delicious. All you need are your favorite vegetables, and you’re ready to go. All you then have to make is the stir fry sauce.
7. Vegetarian Bolognese Sauce Recipe
At first, when I started cutting meat out, I had a hard time finding a good vegetarian bolognese sauce recipe. I can finally say, I’ve found it! For the sauce, all you need are mushrooms, celery, roasted tomatoes, garlic, and onion. The texture feels like regular bolognese and the flavors are amazing!
8. Black Bean Tacos
As I stated before, I’m obsessed with Mexican food. I was thrilled when I found this vegetarian-friendly taco recipe! It only takes twenty minutes to prep and cook these, and they’re seriously delicious. Give these vegetarian tacos a taste!
9. One Pan Broccoli Quinoa Skillet
I completely understand that this recipe doesn’t sound appealing. You’re probably asking where’s the flavor. Well, this recipe also includes white beans, parmesan cheese, and plenty of other flavorful ingredients. This has to be one of my favorite vegetarian dinners I’ve tried!
10. Black Bean Burger
Okay, veggie burgers are a classic vegetarian dinner. However, I’ve had a tough time finding ones that I like in the town I live in. That has resulted in me venturing to make my own. I can honestly say that these home made black bean burgers are better than any store bought brands!
