Christmas is right around the corner. And some of us will be spending it with our friends. Here are a few easy Christmas dinner recipes to consider.
1. Pork Tenderloin
The secret to this easy Christmas dinner, is using a cooking bag. For those of you who don’t know, a cooking bag can be purchased at any grocery store, and it makes cooking idiot proof. The cooking bag keeps food moist, cooks in less time, and makes clean up a breeze. To start, you need a pork tenderloin, two jars of cranberry chutney, (one for cooking the tenderloin, and the other for serving on the table) and a few spices you already have in your cupboard. Sprinkle the tenderloin with a little salt, pepper, and some garlic powder. Prepare the cooking bag as directed and add one tablespoon of flour to coat the bag. Place the pork tenderloin in the bag and pour a jar of cranberry chutney over the tenderloin. Seal the bag and make six half-inch slits to allow the steam to escape. Cook as directed, based on the weight of the tenderloin. Serve with roasted vegetables, a spinach salad, a few rolls, and some dessert, and you have an easy Christmas dinner.
2.Bacon Wrapped Asparagus
A great, easy side dish is bacon-wrapped asparagus. Preheat your oven to 400 degrees. For crispy bacon-wrapped asparagus, place a wire cooking rack on a cookie sheet. Trim the ends of the asparagus and drizzle with extra-virgin olive oil. Wrap asparagus with bacon, leaving tips exposed. Bake for ten minutes and done! A side dish to go with your easy Christmas dinner.
3. Baked Brie With Toasted French Baguette Slices
How about an easy appetizer? You’ll need an eight-ounce wheel of brie cheese, half a cup chopped walnuts or pecans, your choice, and some store-bought caramel sauce, one-third cup. Place the wheel of brie on a baking sheet, sprinkle it with the chopped nuts, and bake in the oven until it begins to melt, about ten minutes. Place the cheese on a serving dish and pour the caramel sauce over the cheese. Garnish with dried cranberries. Serve with toasted french baguette slices.
4. Toasted French Baguette Slices
Preheat oven to 375 degrees. Cut the baguette into 1/4-1/3 inch slices. Brush the slices with olive oil or melted butter and place in a single layer on a baking sheet. Bake from eight to ten minutes, a turn once halfway through baking period. Serve with warm baked brie.
5. Grape Salad
This colorful salad is an easy Christmas dinner favorite. All you need is 2.5 pounds of red and green seedless grapes; 4 ounces of cream cheese (at room temperature); one half-cup of sour cream; 3 tablespoons of light brown sugar, divided; and 3/4 cup of toasted pecans. Cut the grapes in half. Stir together the cream cheese, sour cream, and 2 tablespoons of the brown sugar in a bowl until the sugar is dissolved. Add the grapes and stir until the grapes are coated with the mixture. Add the pecans and the remaining brown sugar just before serving.
6. Christmas Cake
A great way to top off our easy Christmas dinner is with a cake to celebrate the birth of Christ. Any flavor boxed cake mix will do. Decorate with vanilla frosting, candy canes, and red and green gumdrops to complete the festive occasion.
