Delicious Egg Recipes That Keep You Healthy & Full

Egg recipes are great for breakfast, lunch, and even dinner if looking for healthy meals to fill you up! Eggs are a great source of protein as well as other vitamins and minerals; you just have to be careful of eating too many egg yolks because the cholesterol is located there but the egg whites are healthy and contain most of the protein anyway. So if you’re looking to control your cholesterol then you can take out of the yolks and make great egg white omelets and such! Here are 10 delicious egg recipes that keep you healthy and full!

1. Vegetarian Black Bean Omelet

If you want hearty egg recipes that keep you full then you need to try this vegetarian black bean omelet. This recipe is easy to make and full of great flavors! You’ll need a can of black beans, lime juice, cumin, hot sauce (optional), eight eggs, and salt & pepper. There are some additional ingredients you can add to spruce up the flavors including feta cheese, pico de gallo, and sliced avocado! A perfect choice for breakfast to start off your day full and healthy!

2. Crustless Quiche

When looking for egg recipes you can’t leave out this delicious crustless quiche! Leaving out the pastry shell makes the dish healthier and the egg itself actually makes a great crust as well. For this recipe, you’ll need butter, cremini mushrooms, shallot, spinach, salt & pepper, whole milk, sun-dried tomatoes, Parmesan, and eight large eggs. It should take about 20 minutes to prep and then another 20 to cook this delicious quiche. You’ll have plenty of leftovers as well for more delicious, hearty, and healthy breakfasts!

3. Breakfast Hash with Sweet Potato and Chicken Sausage

Add this breakfast hash to your go-to egg recipes for a hearty breakfast! By substituting for sweet potatoes you’ll make a more lean and healthy breakfast hash than typical ones using regular potatoes. This recipe is straightforward so anyone can make it! You’ll use sweet potatoes, olive oil, chicken sausage (or chicken-apple!), yellow onion, bell pepper, cayenne pepper, salt & pepper, and four eggs. If you don’t like sunny-side-up eggs then you can scramble them just as easily and still get a delicious breakfast hash.

A good excuse to break out some tasty egg recipes is when you have an excess of leftover hardboiled eggs such as after Easter! Here’s a recipe that’s perfect for that for making a healthy egg salad. This egg salad recommends four whole eggs then two additional egg whites. If you prefer a more rich, “eggy” taste then you can use all six yolks. It also substitutes Greek yogurt for mayonnaise which helps lower the calories as well as adding protein! Overall, a super healthy choice when looking for tasty egg recipes!

5. Veggie Scramble with Mushrooms, Spinach and Goat Cheese

This is a super easy recipe to make that you can whip up in no time. You’ll only need some butter, shiitake mushrooms, spinach, goat cheese, milk, salt & pepper, and about eight eggs! You’ll first cook up the mushrooms and then the spinach separately until both are heated through and cooked. Then you’ll cook up your eggs and once they’re close to being done but are still soft and loose you’ll add in your other ingredients. Put in your cooked spinach and mushrooms then add the goat cheese as well and cook for just a couple of minutes longer. Finally, season with your salt & pepper then enjoy your hearty and healthy meal! An easy choice for your go-to egg recipes for breakfast or really any meal!

6. Low-Carb Breakfast Enchiladas

Some egg recipes might take a little bit longer than others but the added time usually just adds to the flavors! For this recipe, you’ll make low-carb breakfast enchiladas that are delicious and super filling. This is one of the more unique egg recipes on this list as you’ll be making “egg tortillas” for these breakfast enchiladas. Then you’ll fill those egg tortillas with your filling of bacon, spinach, black beans, and cherry tomatoes. Roll up your egg enchiladas then spread a thin layer of enchilada sauce and cheese on top then bake for about 15 minutes! It’s a great low-carb option for a really hearty breakfast that will likely leave you with some leftovers for another tasty meal.

7. Healthy Smoked Salmon and Boursin Cheese Frittata

If you want protein-packed egg recipes then this smoked salmon and Boursin cheese frittata is perfect for you. The recipe should take no more than about 25 minutes to prep and cook then you can devour this hearty and healthy breakfast. You’ll need six large eggs, milk, light sour cream, salt & pepper, red onion, Boursin cheese, smoked salmon, olive oil, chives, and Mesclun salad dressing with vinaigrette.

When hosting a brunch you want good egg recipes that can serve lots of people! This recipe for omelet stuffed peppers is perfect for serving a lot of people with a tasty and healthy appetizer. You’ll combine the ingredients of the eggs, milk, cooked bacon, shredded cheese, and chives and pour them into your bell peppers (after they’ve been warmed in the oven for about five minutes). Then bake your filled peppers for about 35-40 minutes until your eggs set then garnish with more chives and enjoy!

If looking for gluten-free egg recipes then this whole30 breakfast burrito is a great choice! It replaces the tortilla with a lettuce wrap (collard greens) and gives you a healthy burrito with vegetables and eggs. The recipe uses ghee, yellow onion, cumin, garlic powder, salt & pepper, potatoes, bell peppers, baby spinach, eggs, and collard green leaves!

10. Sweet Potato Egg-In-A-Hole

The last of these egg recipes is a healthy variation on a classic egg-in-a-hole but this time you’ll use a sweet potato! The recipe is straightforward you’ll just need sweet potatoes, olive oil, eggs, white Cheddar, bacon, salt & pepper, and chives for garnish. You’ll first bake the sweet potato halves in the oven for about 10-15 minutes until mostly tender. Then make a hole in the center and crack your egg into it. Sprinkle some cheese and chopped bacon over that then continue to bake for about 12 minutes!
