7 Autumn Recipes For The Squash Lover

Autumn recipes are one of the best things about fall. Especially if you love squash as much as I do. Squash is very versatile and can be used in both desserts and savoury dishes. There are some lovely autumn recipes you can make with squash and we’re gonna look at 7 of those.

1. Cinnamon Roasted Squash

One of my favourite autumn recipes is also one of the simplest. There is actually very little you have to do to make squash taste fabulous. You can find an example of this autumn recipe here. The simplest way to roast squash is to just cut it into pieces, however small or large you’d like, cover with some sugar syrup (sugar dissolved in water) or honey and then bake in an oven (about 200℃) until soft (and caramelised).

2. Banitsa – Filo Pastry With Squash

This is a traditional Bulgarian winter and autumn recipe. It is filo pastry stuffed with squash (and often walnuts). It is delicious and relatively simple to make. You can follow this recipe to try it out yourself. I bet it will be the new addition to your must make autumn recipes.

3. Sausages Baked With Squash

This autumn recipe could be mage vegan/veggie if you replace the sausages, though that would just make it a big tray of veggies. Which, actually, isn’t that bad, so it really all depends on your preferences. In any case, it is a very simple and delicious autumn recipe, which you can find here.

4. Chickpea And Squash Curry

This may not be your average autumn recipe but it’s an amazing squash recipe, which will keep you warm in the cold autumn days. It’s a delicious and healthy recipe, which you could add to your weekly repertoire. Click here to go see it.

5. Roasted Squash And Beetroot Salad

This is one of the perfect autumn recipes to make for a warm autumn day picnic. Even the colours of this salad scream autumn! It’s another very easy but extremely delicious recipe which can be served with some humus, poached eggs or even some banitsa on the side. While it’s very simple, it’s not a quick salad, as the vegetables have to be roasted. Having said that, you don’t really have to pay much attention to it and after the vegetables are done it is easy to throw together. It’s perfect for those who work from home! Find the recipe here.

6. Squash Soup

This is one of my favourite autumn recipes and my favourite soups in general. The way I usually make it is by cutting a butternut squash in half, removing the seeds (don’t throw these away) and then baking it until soft. Wrap a few garlic cloves it tin foil and bake with the squash. While they bake, caramelise some onions in the pot you want to cook your soup in.

Once the squash is ready, scoop it out of the skin and into the pot with the onions and the baked garlic. Add water, salt, pepper and a whole lot of thyme. Simmer for about 10 minutes and then it’s ready. The last step is to blend the soup until it’s smooth. The seeds can also be baked and added to the soup before serving. 7. Butternut Squash Tagine

Who doesn’t love a one-pot recipe? This is one of the easiest autumn recipes on the list. It is also perfect for uni students because it is very affordable. It will cost you about £5 to serve 4-5 people. Or to serve yourself 4-5 times. It’s a healthy and warming recipe, which is also vegan and gluten free.
