Directions

 Preheat your oven to 425F. Rinse your asparagus and lightly pat dry with a paper towel. Remove excess stem and place into an oven safe baking dish before adding your olive oil. Lightly toss with tongs or your hands to make sure all surfaces of the asparagus are coated. Next, season with your salt and pepper. Add in your lemon juice and minced garlic. Place into the oven and bake for 10 to 15 minutes, depending on how tender you like it. Serve and enjoy.

  • 1 tbsp bacon grease
  • ½ white onion, diced
  • 3 cloves of garlic, peeled and minced
  • 1 dash red wine vinegar
  • 1 pinch salt 
  • 1 pinch pepper

Directions

Begin by taking a large flat pan and heating over medium high heat. Add a small amount of bacon grease to your pan and gently move it around until the bottom is coated. Next, add in your onions and garlic and cook until soft for about 5 minutes. Proceed to add in your salt, pepper, red pepper flakes and vinegar. Add your spinach and lightly toss. Cover and let wilt for 1 to 2 minutes. Serve and enjoy.

Directions

In a large pan or skillet, heat your cooking oil over medium low heat. Add your sausage breaking up in the pan and let cook for 2 minutes. Next, add in the remaining cooking oil and stir in your onions and garlic. Cook until soft, about 3 minutes. Add your kale and cook until it begins to wilt, about 2 minutes. Note, if you want to speed up this process, cover the top and the steam and  wilt your kale faster. Add in your tomatoes, salt and pepper, bring to a rolling simmer. Reduce the heat on low and cover for 15 minutes. Then, add your beans until warmed through, about 5 minutes. Serve and enjoy.
