I personally love baking salmon, with 4 lemon wedges, 1 pinch oregano, 1 pinch cayenne pepper, 1 pinch salt and 1 pinch pepper. And if you’re really ambitious, top it up with some light freshly grated parmesan. Begin by preheating your oven to 450F. And let it bake for 12 to 15 minutes, making sure to let it rest after removing it from heat. The meat of the salmon is light, flakey and delicate. When I’m not feeling like veggies, I will make a mixed berry salad,with blueberries, strawberries and spring mix lettuce. I lightly toss it in a raspberry vinaigrette and top it off with almonds ( also full of antioxidants) and enjoy.
