How to cook it properly all depends on seasoning, temperature and timing. Don’t have a lot of experience cooking fish? No problem, no need to shy away from fish! Ingredients 

  • 3 sprays cooking spray ( depending on the size of the dish)
  • 2 pounds of haddock fillets
  • 1 small pinch onion powder
  • 1 small pinch paprika 
  • 1 small pinch garlic powder
  • 1 small pinch black pepper
  • 1 pinch salt
  • 1 small pinch cayenne pepper
  • 1 tbsp butter, cut into pieces
  • 1 lemon, cut into wedges

Directions 

Begin by setting an oven rack about 6 inches from the heat source. Preheat your oven’s broiler. Line a baking sheet or dish with parchment paper or cooking spray. Next, arrange your haddock on the baking sheet or dish. Mix your paprika, onion powder, salt, black pepper and garlic powder in a small mixing bowl. Sprinkle over the haddock. Next, dot your fish with pieces of the butter. Broil your fish in the preheated oven for 6 to 8 minutes, until outside is lightly crisped. Serve with your lemon wedges. Enjoy.

2. Steamed Clams With Butter and Garlic

Ingredients 

  • 5 tbsp butter, unsalted
  • 3 cloves garlic, minced
  • 1 cup of white wine of your choice
  • 1 tbsp lemon juice
  • ⅓ cup parsley, chopped
  • 3 dozen little neck clams, rinsed and scrubbed
  • 1 lemon, cut into wedges 

Directions 

In a large skillet, melt your butter over medium heat. Add in your garlic and stir constantly until fragrant. This should take around 30 seconds. Be sure not to burn your butter! Add in your wine and lemon juice, bringing to a rolling boil. This white wine will cook off quickly but leave the flavor. Next, add in your clams and remaining butter. Cover and let clams until half opened. This should take around 7 to 8 minutes. Occasionally shake the skillet while steaming. Discard the clams that do not open. Remove from heat and sprinkle with parsley and garnish with lemon wedges. Plate your clams. Serve and enjoy.

3. Tuna Patties

  • 10 tsp seasoned bread crumbs ( Italian style work best for this) 
  • 3 cans of tuna, drained
  • 2 tbsp onion, diced
  • 1 pinch black pepper
  • 3 tbsp vegetable oil
  • 3 tbsp parmesan, grated

Directions 

Begin by beating your eggs and lemon juice in a  small mixing bowl. Stir in your parmesan and bread crumbs. This should turn into a paste. Add in your tuna and onion and mix well. Season with your black pepper and shape your tuna into eight 1 inch thick patties. Next  heat up your oil in a skillet over medium heat. Fry your patties until golden brown, cooking them for 5 minutes on each side. Serve and enjoy.

  • 1 tbsp capers
  • 1 package of smoked salmon
  • 3 dollops cream cheese
  • 1 lemon, cut into wedges 

Directions

Start by toasting your everything bagels either with a toaster on the stove top. Layer your cream cheese on the bottom of your toasted bagels. Carefully arrange your smoked salmon. Add your sliced red onion, topping it off with capers. Squeeze some lemon juice over the top. Serve and enjoy.

  • 2 tbsp white wine
  • 1 shallot, minced
  • 6 tbsp butter, unsalted

  • 1 ¼ pound of sea bass ( cod works great for this as well)
  • 1 large pinch salt
  • 1 large pinch pepper
  • 1 tbsp lemon juice

Directions 

Preheat your grill on high. If you do not have access to a grill, take a large pan and turn on medium high heat. Combine your wine and shallots in a small saucepan and cook over medium high heat. Reduce the heat and cook for 3 to 4 minutes or until wine has reduced. Change the heat to the lowest setting and carefully add your butter. Whisk one piece at a time until butter is completely melted. Remove from heat and add in your capers and herbs. Cover to keep warm. Season your fish with salt and pepper. Toss to coat it before cooking on medium high heat, cook about 5 minutes per side or until warm and flakey. Plate and drizzle butter sauce over the top. Serve and enjoy.
