Preparing your food at home before you leave the house for a busy day ahead can be really useful when it comes to keeping yourself eating healthy and saving money from all that eating out! Here are 10 super easy and healthy meal prep recipes that you can do the night before or once every few days and then have all your lunches, and maybe dinners, ready at any time!
1. Smoky chicken and cinnamon roasted sweet potatoes
This recipe is a lot easier than it initially appears and it can be really fun to make! Simply add some BBQ sauce on the chicken, using either breasts or thighs, and cook it on a grill or a grill pan. Steam any vegetables to your liking and roast the potatoes!
This can last you for at least 4 days worth of lunch, so definitely take some time and make it during the weekend, so you have most of your week’s meals planned!

This recipe is so easy to make, it’s super healthy and it only takes about 30 minutes!
Make a simple lemony marinade with some olive oil, lemon juice, garlic, dried rosemary and parsley, and pour it over chicken breasts, potatoes and asparagus and roast until ready. Doesn’t get more simple than that!

4. Sheet pan steak and veggies
A way to get your protein and your healthy carbs into your diet is simple, just follow this recipe and meal prep for the week ahead.
Just pre-heat the oven and lightly oil a baking sheet for the pan. Boil 2 pounds of potatoes and place them when ready with the broccoli on the baking sheet. Add olive oil, garlic, thyme, salt and pepper to taste and season the steaks with salt and pepper as well. Broil in the oven until the edges of the stake are brown and wait until desired doneness. Simple as that!

This is my all-time favourite meal prep one and probably my go-to one for every time I’ve actually decided to be organised and prepare my food. It’s super simple!
In a large pan, add olive oil, add the chicken thighs and season with salt and pepper. When the chicken it’s cooked remove it from the pan and slice into strips. Cook some green beans until crisp, and then add again the chicken strips to the pan adding as well pesto and tomatoes and stir until properly mixed. Easy like that!

As if we have not established that meal prepping can be the easiest thing in the world, this recipe literally requires you to cook the chicken (which doesn’t take a lot of time at all), cut up some cucumbers and set up some tomatoes, bread and hummus among the rest.
