Fall Harvest Vegetable Soup Ideas You Should Try

On a cold day, soup is the perfect dish to warm you right up. It’s one of the only perks that come to mind when thinking of frigid fall weather. With it being the harvest season, plenty of vegetables are at their peak right now, so you’re going to want to consider including them into the mix when you’re making some homemade soup. Here are some harvest soup ideas you should definitely check out!

Butternut Squash Soup

A perfect soup for fall is butternut squash soup. Made with butternut squash, onions, potatoes, carrot, celery, and sometimes chicken for a little added substance. The key to this soup is making sure you add in two tablespoons of butter and a little salt and pepper. If done correctly, your soup will be flavored to perfect and you’ll have leftovers all week!

Sweet Potato

Sweet potatoes are a staple fall vegetable. Not only are they rich in flavor but they are also incredibly healthy for you, as they are loaded with key nutrients and vitamins. With this soup, the prep process is fairly easy. You’re going to want to include sweet potatoes, onion, water, red pepper, and olive oil. Also optional, but for a little more filling dish, you can add in some boiled chicken, bacon bits, parmesan cheese, and some parsley leaves. This sweet soup will be sure to satisfy your taste buds this autumn!

Pumpkin Soup

Is it really fall if you’re not consuming something pumpkin flavored? Pumpkin soup is a creamy and delicious wall to get your fill of harvest, and the best part is it’s fairly easy to make. For this soup, you’re going to need pumpkin puree, chicken stock, onion, whipping cream, peppercorn, and salt. To get in an added veggie in-take you can choose to mix in some zucchini, broccoli or mushrooms. Any way you decide to prepare your soup, it will be sure to place you in a harvest mood!

Spinach and Artichoke Soup

Ever thought about what a dip might taste like in soup form? Well, this spinach and artichoke soup comes pretty close to the idea! Made with fresh spinach and chopped artichoke, this dish will have you have you feeling like it’s fall. Besides the two main veggies, in order to make the soup, you’re going to need chicken broth, cream cheese, chopped onion, chicken, and garlic cloves for flavoring. Once you’re done you will have a tasty harvest meal!

Wild Rice Soup

If you’re looking for a soup that mixes in all the best that fall has to offer, then wild rice is the soup for you. Featuring veggies like sweet potato, onions, celery, carrot, kale and mushrooms, as well as the inclusion of wild rice, the soup is quite flavorful and has a little something for everyone. In addition to these veggies, you’re also going to need milk, vegetable stock, flour and butter, and some salt and cracked black pepper for seasoning. In order to make the soup your corn is going to want to be in whole kernel form, but any kind of potato should do, as long as they’re diced. You’re also going to want to include chicken broth, flour, shredded carrot, green pepper, butter, and maybe some added bacon bits for added taste. To flavor, you will want to use cayenne and black pepper, as well as salt.
