5 Low-Calorie Cobb Salad Variations That Are Healthy And Delicious

Americans have sure brought some interesting salads to the world, none more so than the hearty Cobb salad. While its origins have been disputed, it’s said to have been first created in the 1930s at a Hollywood restaurant. Either way, it’s a very popular dish that has been around for a long time. A traditional Cobb salad includes crisp salad greens, tomato, Roquefort cheese, avocado, hard boiled egg, bacon and chicken. Here are our five healthy variations on the traditional Cobb salad!

1. Cobb Salad Wedges

These wedges are a fun and different way to serve the traditional salad. Instead of mixing everything together in a bowl, cut the iceberg lettuce into small wedge shapes. Then prepare your salad ingredients and sprinkle over the top of the wedges and finish with a drizzle of the dressing on top. It’s great to serve as healthy finger food for a party! Instead of bacon, this recipe uses ham which is a much healthier alternative. It also includes red onion, edamame and cucumber which add a great crunch. 2. Salmon Cobb Salad With Creamy Dill Dressing

This variation has a fresh, healthy twist using salmon instead of chicken and bacon. Salmon is really good for you as it’s rich in omega 3 fatty acids, high in B vitamins and a good source of potassium. Also, a healthy diet includes two portions of fish a week so this recipe is a great way to get one of those portions in. This salad is full of extra vegetables you won’t find in a traditional recipe, including carrots, capsicum and red onion. It also gives the salad more substance, than simply filling up with lettuce. The addition of quinoa makes this variation perfect to store in a mason jar when you’re on the go as it stops the dressing from soaking into the vegetables. The addition of grilled vegetables give the salad a much needed nutrients boost and pumpkin seeds add the benefits of being high in antioxidants, fibre and magnesium. Also, the home made ranch dressing made from yogurt is a much healthier version of the delicious sauce, with 10 timeless calories than a store bought one.
