5 Light Recipes For The Summer

With the hot weather and the summer coming up, its normal to not want to stuff our faces with heavy foods, that will make us not feel that great with ourselves afterwards. So we have created a list of 5 easy light recipes that are perfect for the summer.

Sushi bowls

Homemade sushi bowls are a great way to have easy sushi flavours without spending loads of money. There is no rolling involved either, which make them way easier to accomplish. You can get supper creative with your toppings to which is great because it makes it super customisable for you.

You start off with a bowl of rice, then add vinegar, soy sauce and sweetener. And then it’s pretty much all up to you, you can add different types of cheese, different vegetables, why not add some smoked fish as well and some seeds or nuts and you are done. It’s a really easy recipe, that everyone is set to love because of how customisable it is.

Zucchini noodles with basil-pumpkin seed pesto

Fresh, raw zucchini noodles tossed with basil pesto and cherry tomatoes make a light, healthy meal. You can make this recipe for both lunch or dinner and it will keep you full while still feeling light enough to go on with your day.

All you need:

Basil-pumpkin seed pesto (½ small yellow onion roughly chopped, 1 garlic clove roughly chopped, 2 cups packed fresh basil leaves, ½ cup green pumpkin seeds, ⅓ cup olive oil, 2 teaspoons red wine vinegar, Pinch of red pepper flakes, salt)

Zucchini noodles (3 large zucchini, salt, 1 pint cherry tomatoes, fresh basil leaves for garnishing)

To prepare the pesto: In a food processor, combine the onion, garlic, basil, toasted pepitas, olive oil, vinegar and red pepper flakes. Blend until smooth and season with salt, to taste (I added about ½ teaspoon—if the mixture tastes overwhelmingly oniony, don’t worry, it will mellow in a few minutes. I added another teaspoon of vinegar to help balance the flavours).

To prepare the noodles: Spiralize the zucchini with a spiralizer, or turn the zucchini into noodles with a julienne peeler, or grate the zucchini the long way on a large box grater. Toss the zucchini with pesto until well coated, and season with salt (I added another ¼ teaspoon). Transfer the pesto noodles to a large platter and sprinkle with the cherry tomatoes. Tuck the fresh basil in to the corners to garnish.

Quesadillas with scrambled eggs, spinach and cheese

The filling of the quesadillas is composed of spinach and scrambled eggs, which is secured to the tortillas with some shredded cheese. Then, to make the quesadillas, you need to sprinkle a tablespoon of cheese on the outside of the quesadilla and let it fry against the pan. That is it. Easy right? You can serve it with guacamole for added tastiness or just keep them as they are.

Caprese pasta salad

Probably my favourite from this list of light recipes, this pasta salad is great whether you decide to serve warm or cold, so it could easily be considered a pasta dish instead. It’s simply made with your favourite type of pasta, lots of cherry tomatoes, mozzarella pearls, fresh basil and olive oil. The recipe is roughly inspired by the classic caprese salad, where pasta plays a supporting role to this plate. The entire recipe take about 15/20 minutes.

Briefly cooking the tomatoes on the stove really helps bring their flavour out, while releasing some juices that combined with the olive oil make a light pasta sauce. At the same time boil a large pot of salted water and add in your pasta (the time should be written on the pasta packet). Once the pasta is ready drain it and set it aside. Add to it the tomatoes with the sauce that they have created and add the mozzarella balls (if you can’t find any, you can buy a normal mozzarella and cut it to pieces). Now stir all of your ingredients together and add a touch of basil to really complete the dish.

Green hummus sandwich

Another one of our great light recipes is the green hummus sandwich. We start by lightly toasting the bread (you can choose whichever kind of bread you prefer). Spread both sides generously with herby green hummus. Top with crisp cucumber, some fresh lettuce and tangy pickles. Place the second piece of bread on top. Hear you have a perfect light lunch, that took less than two minutes to prepare.
