8 Healthy Summer Recipes That Will Keep You In Shape

When the sun comes out and the temperature starts to rise, the hunt for healthy summer recipes begins. It’s time to switch out those comforting pies and lasagnes for something fresher and lighter. And, of course, everyone’s normally aiming to be on a health kick to get in shape for the holiday season too. So, here lie eight truly tasty recipes to give you a surge of inspiration for all of the nutritious breakfasts, meals and desserts you’re hoping to indulge in this summer.

Mixed Berry Smoothie Bowl

It goes without saying that when you know you have a good breakfast idea in mind, it makes waking up a whole lot easier. To recreate the first of these healthy summer recipes, blend 3 frozen bananas with 1/2 a cup of frozen berries. Then top with a handful of fresh strawberries, raspberries and blueberries.


Vanilla Coconut Cashew Latte

This is one of the best healthy summer recipes if you’re on the go in the morning and want a cool coffee fix to kick-start your day. Measure out 3/4 of a cup of strong brewed coffee and 1/4 of a cup of coconut then pour into a blender whilst adding a dash of vanilla essence, some ice cubes and cashew nuts.

Mediterranean Quinoa Salad with Roasted Veggies

Now, this one has a fair few ingredients in but the method is pretty simple. Add chopped eggplant, bell peppers and onions to a lined baking tray with a drizzle of olive oil and salt and pepper. After roasting for 20 minutes, take it out of the oven and leave to cool whilst preparing a bowl of quinoa, cucumber, tomatoes, garlic and herbs. Add it to the roasted veg, mix it up and add a sprinkling of toasted pine nuts.


Chicken Fajita Bowl

A meal-prep bowl will be one of the most useful healthy summer recipes for you when it comes to lunchtime, especially at work. Marinate diced chicken with fajita seasoning for at least 15 minutes and cook in oven until golden. Then add any toppings you like such as tomato salsa, avocado, cheese, sour cream or jalapenos. Leave in the fridge overnight and it will be good to go in the morning!

Vegan Spicy Thai Peanut Ramen

In a large pot heat: a dash of olive oil, chopped garlic and grated ginger. Add curry paste, 3 cups of veggie broth and a can of coconut milk. Add in 1/2 a cup of peanut butter along with soy sauce, agave and lime juice. Leave to simmer on low for 5-10 minutes then add noodles to cook before serving.

Cauliflower Pizza Crust

This is one of the most alternative healthy summer recipes because it’s not how you’d regularly make a pizza but it’s proven to be quite a popular choice recently! Start with pulverised cauliflower, cook in microwave till soft and strain out any liquid. Then add egg, cheese and whatever seasoning you like before pressing the mixture into a flat pizza shape. Bake them in the oven until brown and top them any way you like.


Honey Lemon Chicken and Green Beans Stir Fry

Marinate diced chicken in soy sauce and rice vinegar for 30 minutes before cooking. Cut up green beans and mix up honey, lemon juice, red pepper flakes and corn-starch. Cook the chicken until golden, then add in the green beans and honey lemon sauce. Then ta-da, all done!

Chocolate Orange Slices

Finally, we have one of the easiest healthy summer recipes with this scrumptiously sweet dessert. All you need is slices of mandarins or clementines and a chocolate bar. Melt the chocolate in a saucepan and dip the fruit halfway. Set aside on a tray to cool after adding a sprinkling of sea salt for a little something extra first.
