8 Cinco De Mayo Recipes That Are Beyond Delicious

It’s time to get your Cinco de Mayo recipes ready! The festivity is near and apart from enjoying fresh margaritas and Tequila shots it also calls for delicious dishes to accompany them.

The best thing about these 8 Cinco de Mayo recipes is that you don’t have to be a professional cook or Chef! They are really easy and simple yet deliciously tempting to make. We all look forward to Cinco de Mayo to celebrate the Mexican culture all the way!

So get your pen and paper ready because these Cinco de Mayo recipes might be on your “all year around” menu.

1. Avocado Chicken Enchiladas

I cannot extend enough my feelings about avocados! They are just such a humble given fruit that always come to the rescue even if you don’t need to be rescued.

It’s the flavor and texture that adapts perfectly to any dish you put them on and these chicken enchiladas are no exception. This is one of the Cinco de Mayo recipes that will keep you happy and satisfied.

Just mix in a blender or food processor: two whole ripe avocados with whipping cream, chicken broth, cilantro, cumin, garlic salt, lime juice and salt to taste. Add some of this mixture to a baking tray and some to already cooked-shredded chicken, place your chicken mixture in each tortilla and wrap them. Place each wrap in the tray and cover them with the rest of the avocado mixture.


2. Pulled Pork Nachos

There’s nothing more traditional than some carnitas included in Cinco de Mayo recipes! That delicious, crispy and juicy shredded pork cooked slowly with onions and oregano means everything (it makes me drool just to think about it!).

The most time-consuming here would be cooking the pulled pork but when you think about it, you can take the rest of the leftover pulled pork and make other delicious recipes too. Just place lots of nachos in a baking tray, top them off with pulled pork, sprinkle some bbq seasoning, toss them with some shredded cheddar cheese and bake for around 10 mins. 

To finish it off, once is ready add some freshly chopped cilantro before serving.

3. Beef Tacos With Chipotle Sauce

This recipe will keep your guests coming for more! The tender juicy meat along with some corn tortillas drizzled in a chipotle sauce is the ultimate Cinco de Mayo dish. 

The smoky flavor of the chipotle is the special ingredient here, you can buy it already made from the supermarket. Cook the beef in your slow-cooker for around 5 hours on low heat, once is ready add them to your tortillas, drizzle some chipotle sauce and top it off with fresh pico de gallo.


4. Grilled Corn

Grilled corn will bring some fun to the table, it works great as an appetizer or to accompany any main course. Just grill your corns until tender, while they cook combine in a bowl: sour cream, lime zest, and cumin. 

Once your corns are ready, drizzle them with the sour cream mixture and top it off with some cotija cheese to give it that extra yummy flavor.

5. Cheese And Chorizo Dip

This creamy cheese and chorizo dip will make you and your guests fall in love. Fresh chorizo, poblano pepper and a mix of two types of cheeses are what makes this recipe. Just sautee the chorizo with some chopped onion and poblano pepper, add some flour, tomato, & milk and stir until fully combined.

Once this sauce has thickened, add the cheese mixture and place into the oven for 3 minutes.


6. Spicy Shrimp Tacos

If you are into spicy this recipe will not let you down. Give a twist to the original tacos recipe by using shrimps and chili powder to give it that touch of spiciness. 

7. Chicken Quesadillas

With some rotisserie chicken in hand, you’ll be making this tasty cheesy chicken quesadillas in no time. You will need some flour tortillas, green and red bell peppers, onions and a mix of cheddar and monterrey cheese.

8. Flautas

This is such a great appetizer and versatile at the same time! Flautas can be filled with anything you want, it’s basically rolled stuffed tacos that are fried in oil.

You can get them at the grocery store, in the frozen section, put them in the oven and there you have a delicious and quick appetizer for Cinco de Mayo.
