Grilled Potato Nachos

A great way to utilize your grill is with aluminum foil packets and this recipe uses the foil cooking process to make gooey nachos right on the barbeque. Cut and rinse red potatoes before covering in olive oil, taco seasoning and garlic. Seal in the foil packet and cook on a high heat grill for 15 minutes before topping and then sealing again to let the cheese melt and cook for five more minutes. Toppings that bring this dish together are corn, beans, jalapeños, grilled chicken and of course cheese. Once your packets have cooled serve with salsa and sour cream.

Cheesy Ranch Foil Packet Potatoes

Following the same idea as the nacho foil packets above these packets use the residual heat to make a cheesy masterpiece that works as both a side or main dish. Use half of your ranch dressing when you cook the potatoes and then add the rest at the end. If you want to add a little something extra to your packets you can’t go wrong with a little bacon.

Chorizo and Potato Foil Packets

Again following the previous foil packet examples, but this time instead of just cooking up the potatoes you add in spicy Spanish sausage and onions. The spices and flavors from the sausage will join in with the potatoes in a dish that is fit to be the star of any barbeque.

Garlic and Herb Steak and Potato Packets

Instead of making a side and main separately why not combine the two. Cut your steak into pieces that are two inches by two inches, and to cut your potatoes smaller than one inch to get an even cook. In a large bowl toss steak bites and potatoes with olive oil and steak seasoning before putting in foil packets. Cook on high heat for 10 minutes on each side. Once done cooking you can put the steak directly on the grill to add a char, but only if desired. Serve immediately.
