10 Vegan Recipes That Are Anything But Boring

Some people believe the common misconception that vegans only eat leaves and their food is boring. While I am not vegan myself, I can still attest to the fact that this is anything but true. Here are 10 vegan recipes that will hopefully show you that vegan food can be just as protein-packed and delicious as anything else.

1. Vegan Sushi Rice Bowls

Not only is it significantly cheaper to pack a rice bowl full of vegetables instead of sashimi, but it’s also just as delicious! This is definitely one of the easiest vegan recipes you can make and leaves lots of room for you to customize it as you’d like. You won’t even notice that there’s no fish in it once you get a mouthful of the tasty veggies that you’ll be throwing in here. This recipe is also perfect for those who aren’t the biggest fans of seafood.

2. Green Pea and Chickpea Falafel

Packed with protein and absolutely delicious, this is one of the best vegan recipes that I have found to date. Falafels tend to be a staple in the lives of many who are vegetarian or vegan because they do not contain any animal products, and it’s a win-win here because you’re saving the money on ordering them and just making them at home! Not to mention they’ll probably be far fresher and contain all the best ingredients.

3. Creamy Curried Cauliflower Soup

As a soup lover, one of my biggest disappointments thus far as a vegetarian has been that the majority of soup is made with chicken broth. Making soup yourself ensures that there’s definitely no animal products in it and the ingredients are fresh! This recipe has a great texture thanks to the pureed cauliflower and is the perfect comfort food.

4. Spicy Peanut Butter Tofu with Sriracha

This is a vegan recipe that also happens to be low-carb for all of you trying to cut down out there. Ready in about 35 minutes, this spicy tofu is sure to be a hit with everyone (even if they’re a die-hard meat fan). The sauce adds a ton of flavour to the tofu and is not overly complicated to make. If you’re skeptical about tofu, this is definitely a great recipe to introduce you to it.

5. Homemade Spaghetti O’s

Let’s be honest, the majority of us probably ate this canned deliciousness as a child. However, making it yourself is a great way that it’s made without all kinds of preservatives that are awful for you. Ready in only 10 minutes, this recipe involves minimal effort but results in maximum satisfaction. It’s time to bring the classic childhood comfort food back but in a much healthier way.

Burrito stuffed peppers are just as good without the animal products involved. This is a recipe that is great for your weekly meal prep or even if you’re just feeding a house full of hungry mouths and want to try out something new. This recipe has all the same heartiness as a regular shepherd’s pie, and I guarantee you won’t be able to tell the difference. One mouthful of this should be enough to convince you that vegan food is far from being bland or boring.
