This quick dish would make an ideal lunch or side salad to split with friends and family at a BBQ.<\/p>\n<p>There are a few different variations on very similar Cilantro Lime Sweet Potato Salad recipes so we&#8217;ve listed a few below. Peel the sweet potatoes and then cut them into chunks.<\/p>\n<p>2. Boil the potato chunks in a pan of water until they are soft. This typically takes around 12 to 15 minutes. Then drain them in a colander.<\/p>\n<p>3. Mix together the lime juice,\u00a0olive oil, agave, cayenne pepper, salt, black pepper, garlic and red onions in a bowl, before stirring in the cilantro.<\/p>\n<p>4. Allow it to bake until the inside is soft. This should take around an hour.<\/li>\n<li class=\"instruction \">Heat the olive oil in a pan and saut\u00e9 the kale for a few minutes on either side. When it starts to look brown and crispy on the sides remove from heat.<\/li>\n<li class=\"instruction \">Slice the sweet potato down the middle and stuff with kale and shredded chicken, top with cilantro, avocado slices, and cilantro lime sauce and sprinkle with pumpkin seeds.<\/li>\n<\/ol>\n<p style=\"text-align: center\"><span id=\":23e.co\" class=\"tL8wMe EMoHub\" dir=\"ltr\"><\/span><\/p>\n<h2 class=\"entry-title\">Sweet Potato Black Bean Cilantro Salad<\/h2>\n<p>This recipe serves 3 people and can be served hot or cold.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li class=\"ingredient\">1 sweet potato<\/li>\n<li class=\"ingredient\">1 can black beans, rinsed and drained<\/li>\n<li class=\"ingredient\">\u00bd cup minced cilantro leaves and stems<\/li>\n<li class=\"ingredient\">\u00bc cup red onion, diced<\/li>\n<li class=\"ingredient\">2 garlic cloves, minced<\/li>\n<li class=\"ingredient\">\u00bd tsp cumin and red pepper flake, each<\/li>\n<li class=\"ingredient\">\u00bc tsp salt and pepper, each<\/li>\n<li class=\"ingredient\">\u00bd a lime, juiced<\/li>\n<li class=\"ingredient\">1 tablespoon olive oil<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<ol>\n<li class=\"instruction\">Peel and chop the sweet potato into chunks.<\/li>\n<li class=\"instruction\">Put some olive oil in a pan and fry the chunks of potato making sure to stir them so they don&#8217;t stick, until they soften or start to brown.
