6 Vegetarian Recipes That Will Make You Quit Meat

If you decided to go green for a bit, you need to know that vegetarian recipes can be really tasty. There are so many to choose from!

I’ll have to admit that I am not a vegetarian, but I love vegetarian recipes.

I needed to start with this statement because you do not need to be a vegetarian to love vegetarian recipes. But then again, what do vegetarians eat? Well, everything but not meat-which is why I cannot be a vegetarian. During the years, being vegetarian has almost become a trend. The same people who would post #vegetarianlife are the same one that will stuff their face with nuggets on a drunk night out (true story). My housemate is vegetarian and at least once each week she would make one of her vegetarian meal dishes. At the beginning I was really skeptical, not only I am Italian -yes, we are really fussy- but also there was no meat involved. So, I did try it, and surprise surprise – it was really tasty.

There is this myth that vegetarians’ recipes are really complicated and take times to cook.

So, whether you want to become a vegetarian or you just want to eat healthy and green for a few days, you will find easy vegetarian recipes to inspire you.

1.Frozen Fruit & Almond Crumble

If you are after a caloric and healthy dinner then this vegetarian recipe is made for you. It can take up to one hour to cook, so it is better if you prepare it earlier and reheat it. 3. Pasta Fredda (Cold Pasta)

With this vegetarian recipe, you will never go wrong! Who doesn’t love pasta? Carbonara and Bolognese are not the only way you can cook pasta and make it tasty. This vegetarian recipe, super easy to make, is not only ideal for a quick lunch at home, but you can keep it in the fridge and eat it the next day at work. If you are thinking ‘disgusting’, I have to disagree because most of the ingredients here are 100% natural and they can be refrigerated.

How to:

Let the water boil into a pan. ONLY when the water is boiling add the pasta and let it cook 15 min. In the meanwhile, cut the tomatoes, mozzarella and the half of an onion. Put everything into a large bowl or a tray and mix it with oil and salt. Once the pasta is ready, add it to the veggie and mix it again. Place in the fridge if you want to eat it cold or if you are too hungry it is ready for you!

4. Vegetarian Lasagna

Who said that vegetarians cannot enjoy a tasty lasagna? This easy and green vegetarian recipe will blow your mind.

5. Carrots, halloumi and dill balls

If you want to organise a fancy dinner but still you are not sure about your skills in the kitchen this vegetarian meal is easy and quick to prepare. It looks exactly like meatballs but the taste will be different. These crispy little balls are also low calories so even better if you are on a diet. Wash your hands and tight your apron, because this vegetarian recipe will blow your mind.
