1. Chicken Shawarma Meal Prep Bowls
This is my family’s favorite meal, it is so easy to prepare and absolutely delicious. They are perfect for work lunches and I am sure your kids will love it too. These prep bowls are healthy and mouth-watering. All you need to do is marinate the chicken breasts with the shawarma spice mix which is available in many supermarkets or can take the recipe online and make it yourself.
Bake the chicken breasts in the oven till nice and golden brown once cooled then cut into finger strips and place in a bowl with chopped lettuce, cherry tomatoes, cucumber, red onion slices, and pickled jalapenos.
2. Veg Pasta in White Sauce
I love pasta but would always find it a little time consuming, until a friend of mine told me I could prepare it in advance and it would still taste as good. Ever since then I always meal prep a lot of my pasta dishes, I must admit the veg pasta in white sauce is my go-to dish. Just prepare your white sauce using flour, butter, milk, salt, and pepper.
Then in a large skillet saute garlic, mushrooms, capsicum, broccoli, add the boiled pasta I use penne, then add the white sauce and salt and pepper to taste. Refrigerate or freeze when cold.
3. Roasted Vegetable Rice Bowl
This is not only scrumptious but appetizing and healthy too. With this rice bowl, you can use whatever veggies and seasoning you love or also prepare bowls with veggies each of your family members love, it is that simple and easy. You can also use different kinds of rice like brown rice, basmati rice or wild rice. Arrange the rice at the bottom and the roasted veggies on top and refrigerate when cool.
4. Greek Couscous Salad
If you are looking for a lovely healthy hearty mid-week meal to prepare, then try out the greek couscous salad. Prepare the couscous as per your packaging instructions and do not forget to add your favorite seasoning as well, then add chopped onions, cucumber, parsley, mint, and boiled chickpeas. Then pour over your greek salad dressing. To up it a notch you can also add roast chicken. Once prepped refrigerate till required.
5. Chickpea Curry and Rice Bowl
I make this all the time for my family because it is so quick and easy to prepare. My friend would give me a lot of meal prep recipes and I absolutely loved this recipe of hers. First, saute some onions in oil, to this then add spices such as turmeric, chili powder, and coriander powder.
Once the spices have cooked, add the boiled chickpeas and coconut milk. Give it a boil and add garam masala at last. You can also add vegetables like spinach, aubergines, squash or potatoes whichever you like.
6. Tex Mex Chicken and Rice Bowl
It would be lovely to end your week in the office with a bowl of Tex Mex chicken and rice isn’t? Just perfect to give you that weekend vibe. For this meal prep recipe, all you need to do is fry the chicken breast in a skillet with some taco seasoning. Then in the same pan saute onions, bell peppers, corn and zucchini with a little more of the taco seasoning.
I use brown rice for this recipe, you can choose whichever rice you prefer or can even use it in a wrap. Add a layer of rice in a bowl, then add the chicken, the sauteed veggies and some cooked black beans. Refrigerate when cool.
7. Teriyaki Chicken Stir Fry Bowl
I had made this meal recipe for a couple of my friends and they all seem to love it. This stir fry is simple and so delicious. For this recipe, you can make your own Teriyaki sauce or use store-bought whichever is convenient. Start by frying strips of chicken breast on a high heat pan till golden brown, then add the teriyaki sauce and cook for another five minutes.
Then add broccoli, and bell peppers and further cool for another two minutes or until they are slightly softened and lastly sprinkle sesame seeds on the top. Add this teriyaki chicken on a bowl of rice and refrigerate when cool.
8. Vegetable and Lentil Soup Bowl
This hearty bowl of soup is perfect on a cold wintery day. It is easy and quick to prepare and definitely very comforting. In a large vessel add the dried lentils, vegetables like carrots, leeks, and celery also add tomato puree, chopped garlic, coriander powder, and bouillon powder and cook till tender. Place in bowls and refrigerate when cooled.
