Shakshuka

Shakshuka is the first of our healthy breakfast recipes that you should try. It is a healthy, comforting and warming breakfast recipe from North Africa that is based around poached eggs and a spicy, tomato sauce. The ingredients in shakshuka include:

  • 2 tablespoons of extra virgin olive oil
  • 1 cup chopped yellow onion
  • 1 red bell pepper
  • 3 garlic cloves
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of cumin
  • 1 can crushed tomatoes
  • Fresh spinach
  • Salt and pepper
  • 4 eggs
  • Feta
  • Parsley
  • Avocado

Healthy Pancakes

Eating healthy doesn’t mean you have to give up pancakes, so try out the next of our healthy breakfast recipes! Healthy pancakes are super simple and easy to make and takes only 15 minutes to make.

All you need is:

  • 1 large egg
  • 1 cup of self-raising flour
  • 1 cup of milk
  • 200g blueberries
  • Olive oil
  • 4 tablespoons of natural yogurt
  • Pinch of salt

Grated Apple Muesli

The next of our healthy breakfast recipes is one that was a favourite in my family – grated apple muesli. This recipe is healthy, fresh and delicious! The ingredients you need for this recipe are:

  • Rolled oats
  • 1kg Granny Smith apples
  • Dried fruits of choice
  • Nuts of choice
  • Cinnamon (optional)
  • 3 Oranges
  • Orange juice
  • Greek yogurt (with vanilla if desired)

The method is super easy. To start you need to soak oats in orange juice overnight – the measurements for this depends on how much muesli you are making. Decide how much oats you need for everyone and then cover them with orange juice.

The next day you need to grate all of your Granny Smith apples and mix them through the oats with the dried fruits, and nuts of your choosing. I recommend dried apricots, dried berry mix, dried peaches, almond and walnuts. Squeeze your oranges and add them in with the pulp for another element.

Serve with a dollop of yogurt and add a pinch of cinnamon if desired.

Avocado Banana Smoothie

The last of our healthy breakfast recipes is an avocado banana smoothie. This one is super nutritious, very yummy and easy to eat (drink) on the go. The ingredients for this smoothie are:

  • 1 banana
  • 1 avocado
  • 2 teaspoons of honey
  • 1/4 teaspoon of vanilla
  • 2 cups of milk of choice
  • Ice cubes

To make this smoothie you need to blend the banana, avocado and honey until smooth and then add the vanilla, milk and ice for a further 30 seconds. It is then ready to serve and can be popped in a keep cup to be taken with you.
