I’m an avocado lover, what can I say? It’s just too good in basically anything. Toast some slices of bread, mash some avocado with extra virgin olive oil, lemon juice, coriander, salt and pepper to taste and spread it over your toasts. You can top it with radish, sesame seeds or vegan cheese. This is one of the easiest delicious vegan recipes.
