5 Biscuit Recipes That Are The OG

5 Biscuit Recipes That Are The OG

We all love biscuits and they’re such an important part of life if you love Tea especially. These are the OG biscuit recipes you need to try to get your favourite biscuits homemade and perfect for you. Get the family around and get them trying your biscuits! If you’re not a fan of biscuits, then maybe these delicious biscuit recipes will change your mind. 

1. Chocolate Chip Cookies

Ingredients needed: 120g softened butter, 75g Light brown sugar, 75g Caster sugar, 1 egg, 1 tsp vanilla extract, 180g plain flour, ½ tsp bicarbonate of soda, and 150g dark chocolate.  

Step One: Heat oven 180C. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt. Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 minutes until firm, and then leave to cool.

2. Viennese Whirls

Ingredients needed: 200g butter, 50g icing sugar, 2 tsp vanilla extract, 200g plain flour, 2 tsp cornflour and ½ tsp baking powder.  

For filling: 100g butter, 170g icing sugar, 1 tsp vanilla extract and 50g of a jam of your choice.

Step One: Heat the oven to 180C. Put the butter and icing sugar into a large bowl and beat with an electric whisk until pale and fluffy. Add vanilla extract, and then beat again until fully mixed. 

Step Two: Sift in the flour, cornflour and baking powder and then fold the mixture. Spoon the dough into a piping bag fitted with a large star-shaped nozzle. If all the mixture doesn’t fit, do it in two batches. Pipe swirly circles onto two baking sheets making sure there’s space between each swirl. 

Step Three: Bake for 10-12 mins, swapping trays over halfway through cooking time so the biscuits are evenly baked and golden. Leave to cool for a while, and then start making the filling.

Step Four: Put the softened butter in a large mixing bowl, and add icing sugar. Stir together initially with a wooden spoon then switch to an electric whisk to get a buttercream-like filling. Add the vanilla extract and beat once more to combine everything. Transfer the buttercream to a piping bag and add buttercream to one side of the biscuit and jam on the other half and then put the biscuits with jam onto the biscuits with buttercream.  

3. Shortbread

Ingredients needed: 300g softened butter, 140g golden caster sugar (plus 4 tbsp), 300g Plain Flour and 140g rice flour.  

Step One: Place the butter and 140g sugar in a food processor, and keep whizzing that until completely smooth. Tip in both the flours, and a pinch of salt. Continue to whiz that mixture together until it is fully together.

Step Two: Spread the mixture out in a baking tray, cover with cling film and smoth over until it is completely smooth. Place it in the fridge for around 20 minutes. Whilst that Is in the fridge, preheat the oven to 180C, and then prick the shortbread with a fork and place it in the oven. 

Step Three: Sprinkle the shortbread with sugar, and then leave it to cool a little while. Once it had cooled, cut it up until as many pieces as you wish and store in a airtight container for max 1 week.

4. Jammy Dodgers

Ingredients needed: 200g Self-raising flour, 100g Caster sugar, 100g butter, 1 beaten egg, 4 tbsp of strawberry jam.  

Step One: Heat the oven to 190c. Rub the flour, sugar and butter together until it is similar to a breadcrumb mixture. Add enough egg to bring the mixture to a stiff dough.

Step Two: Cut your cookie shapes out, and space them out as the mixture will spread a little whilst baking in the oven. Make a small dent in the middle, and place a tsp of jam in the centre of them all.  

Step Three: Leave to Bake for 10-15 minutes until slightly risen and just golden and then leave to cool. 

5. Chocolate Biscuits

 Ingredients Needed: 250g Butter, 350G Light brown sugar, 2 eggs, 100g cocoa powder, and 200g chocolate chips.

Step One: Beat the butter and sugar together in a bowl until light and fluffy, and then beat the eggs in one at a time. Sift over the flour and cocoa butter and beat into the butter mix and then fold in the chocolate chips.  

Step Two: Heat the oven 190C, and evenly spoon the mix onto a baking tray even spread apart. Bake for 12-15 minutes until spread out and crusty around the edges. Leave to cool ever so slightly and they’re ready to eat.
