Creamy Guacamole

Guacamole will be the biggest hit at your party, guaranteed. Nothing beats a fresh-tasting scoop of guac, whether it’s on a chip or in a taco. Amaze your guests with this better-than-Chipotle recipe, and don’t be silly, you’re definitely going to need more than one bowl.

Fresh Salsa

Salsa is a must, but I don’t mean the canned kind. Leave those on the shelf and give fresh veggies a try. Fresh salsa is a huge hit at any party, but on Cinco de Mayo it might just be the star. Tomatoes, cilantro, lime, what’s not to love? Leave your guests wondering how you made it taste so juicy and fresh. In only a matter of minutes, this dish can be yours.

Chicken and Cheese Tostadas

Tostadas are super quick and easy, and I mean, who doesn’t love chicken and cheese? Toss couscous in with cilantro and lime for a restaurant-made taste. Some ingredients you will need include chicken, garlic, onion, and pepper. These delicious tostadas can be on your table in just 30 minutes.

Peach, Corn and Avocado Salsa

This salsa is guaranteed to kick off the (almost) summer season. Avocado tastes good in just about anything, and if someone sees that it’s in the salsa they’re guaranteed to give it a try. Peach adds the most refreshing taste, preparing your mouth for summer. Eat it alone, or pile it on tacos, burritos, or even your chicken and cheese tostadas. Can we make a petition for Chipotle to start serving this?

Mexican Buñuelos

Fried dough, cinnamon sugar? Count me in. Guests won’t be able to get their hands off of these, plus the delicious smell will spread throughout your house. Be careful though, they’re impossible to put down. This recipe requires only flour, baking powder, salt, cinnamon and sugar, and cooking oil. So, what are you waiting for? Start cooking!

Fish Tacos

Between your choice of cod, flounder, mahi-mahi, or snapper, you can’t go wrong. Fish tacos are my new biggest obsession, and make a delicious meal for any day, but especially on Cinco. Top these tacos off with all your favorites: avocado, chipotle ranch, black beans, rice, fried onions, the options are endless. These taste amazing in either shell, hard or soft. I recommend making a taco buffet, where you lay out all the ingredients and allow your guests to build their own! This way, you can enjoy 10 of the same, or switch it up and try a new taco each time.

Chicken Enchiladas

Of course, there are many different types of enchiladas, but these are my favorite. Green enchiladas are stuffed with chicken, cheese and sour cream. Mmmmm. What makes them green? Throw on Hatch green enchilada sauce and sliced green onions before baking, then finish it off with cilantro. These are sure to be a hit!

Churros are one of the best pastries ever invented, in my opinion at least. The crunchy, sugary churros can be the perfect snack or dessert, depending on your willpower. Dip them in chocolate, caramel, whipped cream, or serve with fruit. Always make sure to serve warm.

Mexican Rice Casserole

This might be one of the longer dishes to make, but it’s beyond worth it. This casserole is everything you need for Cinco de Mayo in one dish. Beef, corn, cheese, lime, onion, everything. Set aside 40 minutes to throw together this dish, and you’ll be happy you did. For an extra crunch, serve with crushed corn shells. Guests will be raving about this one!
