10 Meals That Avocados Go Great With

An avocado a day keeps the doctor away, right? Or something like that. Anyway, avocado can be the perfect touch for any meal.

1. Toast with Avocado

This snack sounds super simple because it is. The combination of toast and avocados is amazing and healthy. Feel free to jazz up this snack by adding bacon, dried cranberries, or even a hard-boiled egg. You’re the chef. For this snack start by toasting 2 slices of bread. Grab an avocado. For this recipe I am using just one avocado but if your making multiple sandwiches grab multiple avocados. Peel the avocado and then smash it up in a bowl. If you prefer your sandwich to be smooth and creamy you will need to continuously smash your avocado until all the chunks are removed. Then with a large spoon get a scoop of avocado and spread it on your toast. You can spread it on one or both sides, whatever you prefer.

2. Chips and Guacamole

This simple snack only needs 7 ingredients; 1 avocado, 1 chopped onion, 1 minced garlic, sprinkle of salt, a teaspoon of pepper, 1 chopped tomato, 1 juiced lime, and a large bag of tortilla chips. Here we go. Peel and then smash the avocado in a large bowl. Blend in the rest of the ingredients, minus the chips, and stir. Place in the refrigerator for about an hour. After an hour has past grab a handful of chips and place them on a plate. Then you’re done. Eat up.

3. Avocado Smoothie

What a great breakfast you are about to make. You will need a large ripe avocado, 1 cup of your choice of milk, 2 tablespoons of sugar, and a sprinkle of salt. Peel the avocado and add it and the other ingredients into a blender. Blend until your drink is smooth and free of avocado chunks. Once that is complete grab a cup and pour it up. Cover up the remaining. You have about 3 days until this smoothie will spoil.

4. Scrambled Eggs with Avocado

This makes a perfect breakfast or snack. To start you will need 4 large eggs, a sprinkle of salt and pepper, ¼ cup of milk, ¼ cup of shredded cheese, 1 large chopped avocado, ¼ cup of virgin cooking oil, and ¼ cup of chopped green bell peppers. Turn the burner on medium. Let’s begin by placing the bell peppers and cooking oil in a skillet and when the peppers become soft and less crunchy. Add the eggs and milk to the skillet and scramble them together. Once the combination has thickened add the cheese, salt, and pepper and scramble together for about another minute. Once this is complete, take it off the skillet and place it on the plate. Place the chopped avocados on top of the scrambled and dig in.

5. Salad with Avocado

A salad can have anything you want it to. I am going to tell you how I prepare mine (don’t judge me). This is an individual serving size if you want to share double or triple any ingredients you choose. It’s a salad, you can’t mess it up. I believe the most important part of a salad is green that you chose. I like to mix Arugula lettuce with chopped spinach. Make sure you wash it before you add the other ingredients to it. I prefer to mix 1 tablespoon of shredded cheese, 1 tablespoon of blue cheese, 1 tablespoon of black chopped olives, ¼ cup of chopped tomatoes, ¼ cup of scrambled hard-boiled egg, 1 tablespoon of chopped red onion, ¼ cup of chopped oven-roasted turkey, 1 tablespoon of chickpeas, sprinkle of pepper, and honey mustard dressing.

6. Vegan Sandwich

This sandwich is like a sandwich with meat well except for meat. You will need 2 slices of bread, 2 slices of tomatoes, 1 leaf of romaine lettuce, a slice of pepper jack cheese, and last but not least a small avocado sliced into about 4 pieces. Add these ingredients on top of the bread and enjoy it.

7. Chicken Taco with Avocado

I am from a city where tacos are enjoyed for breakfast, lunch, and dinner. So of course, I can find a way to add avocados to this list. This taco is going to be huge and can be shared with others or you can save the leftovers for later. You will need 10 large flour or corn tortillas, 1 cup of cooked black or pinto beans, ½ cup of corn, 2 cups of shredded rotisserie chicken, 3 large avocados, 1 package of taco seasoning, and 1 cup and a ½ of shredded sharp cheese. Heat the stove’s burner to medium and in a large pot add the beans, corn, chicken, taco seasoning and cheese. Stir these ingredients together. Get the avocados and cut out the insides of each until the avocados are hollow and then cut into cubes. Grab a tortilla shell and place the mixture on top of the shell and top it with about a tablespoon of the avocados or more if you prefer. Then fold that tortilla in half and take a breath and eat. You may repeat the eating process until you are full and satisfied.

8. Avocado Chicken Burger

For the summer it’s completely understandable to want to stay in shape. But you must eat. This meal is somewhat healthy. To begin to make sure you have; 1 large avocado mashed, 1 lb of ground chicken, 1 clove of minced garlic, 4 hamburger buns, 1 large sliced tomato, 1 large sliced red onion, 1 teaspoon of vegetable oil, and a sprinkle of salt and red pepper for taste. Combine the chicken, avocado, garlic, and pepper, together in a bowl. Take a handful out to create 4 patties from this mixture. On high in a medium skillet heat the oil and then add the patties and cook each side until golden brown. Grab your buns and add a patty to each. Then for each burger add your desired amount of sliced tomatoes and onions. Then enjoy!

9. Avocado Deviled Eggs

With just 6 ingredients this will make you 24 eggs. If you need less just reduce the amount of the ingredients you will add. Let’s get started. You will need it. 12 large peeled hard-boiled eggs, ¼ teaspoon of salt and pepper, 1 tablespoon of yellow mustard, and ½ cup of mayonnaise, and most importantly you will need one large diced avocado. Grab an egg and cut it in half longways and then remove the yolk and place it to the side and place the egg on a large tray. Repeat this step 12 times (for each egg). In a large bowl add in the mayonnaise, mustard salt pepper, and avocado. Stir it well until it’s smooth. Get a spoonful of the mixture and place it on the eggs, then place in the refrigerator for about 20 minutes to chill and then eat up.

10. Avocado Spring Rolls

I had to save the best for last. This is a great snack. It doesn’t take too long to prepare, and I like to think that this snack is healthy. There are several ingredients you will need but if you don’t like something, don’t add it. This is your creation. You will need; 12 egg roll wrappers,
3 large peeled avocados cut into halves, 1/4 cup sour cream, 1/2 cup diced tomatoes, 1/3 cup diced onion, 1 cup vegetable oil, a sprinkle of salt and pepper, and a tablespoon mayonnaise. Okay, let’s get started. In a bowl smash the avocados, add in the onions, tomatoes, salt, and pepper. Place this mixture on an egg roll wrapper and roll it. Do this about 12 times or until the mixture is gone. Fry each egg roll in a large skillet with vegetable oil for about 3 minutes or until golden. Viola! You’re done.
