Nothing quite beats the feeling of eating an ice cream sandwich on a hot summer day. The soft, gooey texture of the cookies coupled with the chilled, creamy goodness of the ice cream makes for an impeccable summer treat. We’re already drooling here at the thought of it. Store bought ones aren’t terrible. They’re a perfect fix for when you need to quickly fulfill your cravings, but your sweet tooth will tingle with excitement eating an ice cream sandwich that you made yourself.
We have a delicious yet simple ice cream sandwich recipe for you right here! While it’s not with your traditional chocolate wafer-like cookie, we think the ‘chipwich’ is way more scrumptious (plus it is way easier to make!) Plus, it just takes three easy steps.
Ingredients you will need…
- 1 cup butter, unsalted and softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp pure vanilla extract
- 1 1/2 cups of flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
- A pint (or two) of your favourite kind of ice cream
1. Make your ice cream base
Now if you want to make ice cream from scratch, feel free, channel your inner Betty Crocker! We decided to use our favourite store bought ice cream to cut some time. It is super important to let your store bought ice cream sit out on the counter for at least ten minutes. This will soften it, and make it easier to spread. Line a 9-inch by 13-inch pan with parchment paper, and then scoop and spread your ice cream into rows about 1 inch high and 5 or 6 inches wide. If you want to use different flavours for your ice cream sandwiches, go for it! Go wild! Once the whole pan has been covered with your ice cream, place in your freezer for at least 30 minutes for it to set.
2. Bake your cookies
If you’re looking for something quick and easy, you can use pre-made refrigerated cookie dough (like Pillsbury or Toll house.) You can skip the following instructions if you’re opting for this method, and just follow the baking instructions that are listed on the label. If you’re baking your cookies from scratch for your homemade ice cream sandwiches, preheat your oven to 375 degrees. In a stand mixer, combine the butter, brown sugar, granulated sugar, eggs and vanilla extra until everything is well-incorporated and smooth. Pour in your chocolate chips last. Once everything has been well-mixed, use an ice cream scooper and place small mounds of cookie dough onto your baking sheet. Bake for 10 to 12 minutes until the top is golden brown. The cookies should be thin and crisp (though if you don’t like that kind of consistency for your cookies, you can bake for less.) 3. Assemble, then serve!
Once your cookies have completely cooled, it is time to assemble them! We suggest using a circular cookie cutter to help make the perfect ice cream filling for your ice cream sandwiches – plus it will make your life a whole lot easier. Insert into your sheet pan and gently pull out to remove. Place onto one cookie, and then cover with another cookie. Push down together, gently, and then bam – you’ve got your ice cream sandwich ready to go! Repeat this step until you’ve used up all of your ice cream. Make sure to serve immediately before the ice cream melts!
