Healthy is the new sexy! A simple way to start eating healthy this season is to add greens to your diet. For example, celery. It has a lot of antioxidant and anti-inflammatory nutrients that offer multiple benefits to your tummy. Here are 8 celery soup recipe ideas to start off your healthy lifestyle on a good note!

1. Celery And Broccoli Soup

All you need to do to make this famous celery soup is to cut 500 grams of broccoli, 4 stems of celery and 1 onion into large pieces. Then melt 30 grams of butter in a saucepan; fry the onion in it for 3-4 minutes, add celery and broccoli. Fill it up with water or broth and add salt and pepper to taste. Bring it to a boil and cook for around 20 minutes. Turn off the heat and whisk the soup. Serve with croutons and a slice of broccoli on top. Enjoy!

2. Celery and Apple Soup

This recipe is a great way to add apples to your diet. Cube 1 onion, 2 potatoes, 1 stem of celery and 1 apple; chop a few stems of the greens of your choice. Fry vegetables in a saucepan for 5 to 7 minutes, then add apples and 500 ml of veggie broth. Add salt and pepper to taste. Cook on medium heat for 15 minutes; whisk the soup in a blender. Stir in 200 ml of cream and bring the soup to the boil again. Serve with greens.

3. Celery Soup with Rice

Boil 150 grams of rice for about 20 minutes until ready. Cut the veggies: 1 onion, 1 potato, 2 carrots, and 8 stems of celery; grate 2 cloves of garlic. Put them in a saucepan, 2 tsp of olive oil and salt to taste. Fry for about 10 minutes until the onions and celery are slightly softer. Add in garlic and 1200 ml of veggie broth; bring it to a boil and cook for approximately 10 minutes until the vegetables are soft. Add potatoes and rice and continue cooking for another 2-3 minutes. If you want to spice it up, add chili pesto!

4. Celery Soup With White Wine

Didn’t think wine can be healthy. We’ll prove you wrong! Cube 1 stem of celery, 1 carrot, and 1 onion. Fry the onion cubes in a saucepan for 5 minutes; then add carrots, celery and ½ tbsp of dried tarragon. Cook for 5 minutes (or more) until the carrots are soft. Add in 2 glasses of veggie broth, 120 ml of dry white wine, salt, and pepper. Serve it hot (along with an extra glass of wine).

5. Celery Soup With Chicken And Egg Noodles

“Healthy, but make it filling”. Sure thing! For this recipe, you need to boil 300 grams of chicken fillet for about 20–25 minutes until ready. Cool it down. Cube 1 onion, 2 stems of celery, and 2 carrots; slice up the meat. Chop the greens and grate 3 cloves of garlic. Saute garlic and onion cubes in a saucepan; add in celery and carrot cubes and fry for 5 minutes. Pour in 2 liters of chicken broth and add thyme and one bay leaf. When the soup boils, throw in 200 grams of egg noodles. When they are almost ready, add chicken and continue cooking for 2 minutes; add salt and pepper to taste.

6. Celery Soup With Lamb and Lentils

This is another filling celery soup recipe works best to warm you up on a cold winter evening. Cube 1 onion, 2 carrots, 400 grams of tomatoes and 2 stems of celery; grate 2 cloves of garlic. Finely chop 4 stems of parsley. Fry the 900 grams of bone-in lamb in a saucepan for 6 to 8 minutes and then place it on the plate. Add in the veggies to the saucepan and leave it cooking for 5 minutes. Sprinkle with cumin, coriander, ginger, and cinnamon. After a minute or two add tomatoes, 1200 ml of cold water and the meat. Bring to a boil and reduce heat to low. Let it simmer for an hour. Add in 70 grams of lentils and continue cooking for another half an hour. Get the meat and cool it down. Separate from bone and finely chop; put it back into the pan and boil for another 5-6 minutes. Best served with chopped parsley and a slice of roasted garlic bread.

Here is another meaty version of celery soup. Cut 1 onion and 2 stems of celery into large pieces. Add vegetables and chicken to a pan. Fill it with 1100 ml of water. Bring to a boil and cook over medium heat for 40–50 minutes. Place the chicken on a separate plate; cool it down, remove the skin and bones; slice it. Strain the broth. In a separate saucepan, melt 50 grams of butter, add your meat and 50 grams of flour; fry for no more than 2 minutes. Gradually pour in the broth and 120 ml of cream. Cook and stir for 10–15 minutes until the soup thickens; add salt and pepper to taste. Munch Munch!

8. Celery Soup With Potatoes

To make this veggie celery soup, you will need 1 onion, 1 large stem of celery, and 3 potatoes; grate 4 cloves of garlic and chop some spinach. Saute the onion cubes in a saucepan with some butter or olive oil; add garlic and stir for 1 to 2 minutes. Add in the celery and potato cubes, 700 ml of veggie broth, salt, and pepper. Bring it to boil and cook for 15 minutes until the potatoes are tender. Add spinach, let the coup cool down and whisk it in a blender until smooth. Pour in 200 ml of cream; stir and boil. A perfect healthy treat for the whole family!
