Slow Cooker Pumpkin Curry  

If you want something with a little kick for dinner but don’t want the hassle of hovering over a stove, this recipe is for you. The sweetness of the pumpkin is the perfect balance coupled with the spice of the tender chicken. It is salty, savory and a healthy option for your next dinner. 

Ingredients

  • Cubed pumpkin 
  • Red curry paste
  •  Boneless and skinless chicken breasts
  • Coconut milk
  • Fresh veggies of your choosing (preferably ones that have a nice crunch)

Directions 

The most tasking thing about this recipe is the pumpkin prep. In order to prep your pumpkin you will need to scoop out all the seeds. Cube the pumpkin carefully. It is a rounded hard surface and can  be difficult to cut. Make sure you use a sharp knife. You can leave the skin on as you cube your pumpkin. Next, add the pumpkin, red curry, chicken and coconut milk to your slow cooker and cook on high. After the pumpkin and other contents are thoroughly blended, remove the chicken and shred it. Once you have shredded your chicken, add the contents back into the slow cooker and add your veggies. It’s important you put in the veggies last. If you put them in too early they become soggy! Remove from heat and enjoy your spicy kick fall curry.

Prawn And Sweet Potato Noodle Stir Fry 

This dish is perfect for those who crave the sweet rustic flavor of pumpkin and the light tenderness of prawns. This recipe is the ultimate sweet and spicy for this holiday season. Ingredients 

  • 8 Skewers 
  • Sweet potato noodles
  • Veggies of your choosing ( personally I like some with a little crunch to offset the softness of the prawns and noodles) 
  • ¼ cup sweet chili sauce
  • Handful of coriander sprigs

Directions 

Heat up your char grill or barbecue on medium high heat. Put prawns on skewers and cook 2 to 3 minutes on each side or until prawns become red. Note, that if it’s too chilly this fall season for a barbecue, you can do this on your stove. Follow the same directions and heat your pan with a little bit of butter on medium high heat instead. Then, take your frying pan and add the sweet potato noodles. Cook while tossing lightly for 3 minutes or until soft. Place sweet potato noodles in a bowl to the side. Add your veggies to the pan and stir fry for 2 minutes. Make sure your pan is still on medium high heat for this. After your veggies begin to soften, add the potato noodles back into the pan with your sweet chili sauce.Cook for another 1 to 2 minutes. Finally, plate your noodles and arrange your prawns and coriander sprigs to your liking. Serve and enjoy.

Sticky Chicken and Plums 

Are you craving a sweet and savory dinner? This recipe is for you. The sticky tender sweetness of the chicken coupled with the softness of plums is a great addition to any fall family dinner. Ingredients 

  • Chicken Drumsticks ( bones are fine) 
  • Bunches of pak choy, halved. 
  • Steamed rice of your choosing ( I recommend jasmine) 
  • ¼ cup oyster sauce
  • ¼ cup plum sauce
  • 2 tsp grated ginger( you can also crush it with the flat side of a knife)
  • 4 plums, halved.
  • ½ tsp of Italian spice blend
  • 4 plums, halved and pits removed

Directions 

Preheat your oven 375 F. With a sharp knife, cut slits into the thickest parts of the chicken. This will allow for the sauce and plum flavor to absorb while baking. Place your chicken in a bowl and add your oyster sauce, plum sauce and spice blend. Toss your chicken lightly to ensure all surfaces are thoroughly covered. Line your baking tray with baking paper. I typically use a glass baking dish for this instead. Arrange the chicken on your tray, making sure not to put the chicken too close together. Place your chicken in the oven and cook for 35 minutes or until your chicken is a beautiful golden brown. Now, add your plums! Add your plums to the baking tray and bake for another 10 minutes. Add your pak choy to the tray and bake for an additional 2 minutes. Be careful not to burn your pak choy, we just want it to wilt until it’s soft and tender. Serve over rice and enjoy.

  • 3 tablespoons of olive oil
  • 1 small yellow or white onion, chopped
  • 1 cup water
  • 1 tbsp salt
  • 1 tbsp red pepper flakes
  • 3 tablespoons of unsalted butter
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 butternut squash (ranging from about 2 pounds) peeled and diced
  • 1 cup parmesan 
  • Black pepper 
  • Risotto of your choosing

Directions

Preheat your oven to 375 F. Prepare a baking dish for your squash. Heat up one tablespoon of your olive oil until there is a light simmer. Add your chopped onion and a pinch of salt. Stir occasionally until the onions are soft and translucent. This should take around 5 minutes. Then, add your minced garlic and cook for another 1 to 2 minutes. Add your 3 cups of broth and 1 cup of water. Cover and bring to a boil on your stove at medium high heat. Next, remove from heat and stir in your risotto. Cook until it is tender, ranging between 1 hour and 1 hour and 10 minutes. After you put your risotto on the stove, put your squash in your preheated oven. Sprinkle it with some salt and olive oil. Roast until your squash is tender and caramelizing with flavor. This usually takes anytime between 55 minutes to 1 hour. After your squash is baked through, stir in squash to your risotto, pouring the remainder of butter and broth over the mixture. Then, add parmesan and stir thoroughly for about 2 to 3 minutes. Add red pepper flakes and pepper. And watch your family clear their plates.
