1. Garlic Butter Salmon

There are a ton of easy recipes you can bake in foil packets. This garlic butter salmon meal is made in 30 minutes. Whisk together your own garlic butter with lemon, garlic cloves, and your choice of herbs. Then place one piece of salmon in tin foil with some veggies topped with the butter sauce. Close the foil packet and bake the salmon at 375 for 20 minutes. It’s a quick recipe with virtually no cleanup.


2. Shrimp Scampi with Zucchini Pasta

This recipe is a healthy alternative to a classic pasta dish – but it requires a spiralizer. Combine the zucchini noodles with shrimp, olive oil, garlic, 1/4 cup of white wine, and lemon juice. Sauteed over medium-low heat until the shrimp are fully cooked. You can follow a more detailed set of instructions here. This meal provides all the comfort of pasta, with a lot fewer carbs.

3. Balsamic Chicken

This balsamic chicken caprese is a perfect light meal for summer. Sautee the chicken breast with balsamic, garlic, and brown sugar over medium heat. Once it’s fully cooked remove the chicken from the pan and place fresh mozzarella, tomato, and basil on top. Put each piece in a broiler until the cheese begins to melt.


4.  Easy Enchiladas

This simple enchilada recipe is made with only 5 ingredients in under an hour. Sautee ground beef, or chicken in a pan with salsa in a large skillet. Line a large baking dish with foil then fill the dish with red enchilada sauce. Place warm tortillas in the dish then fill each tortilla with meat and cheese. Tightly wrap the tortillas and pour the remaining sauce on top. Bake at 375 for 30 to 35 minutes. It’s basically the perfect comfort food.

5. Crockpot Orange Chicken

Instead of ordering in Chinese takeout, try this convenient and delicious orange chicken recipe. Grease your crockpot and add marmalade, BBQ sauce, and soy sauce. Cut raw chicken breasts into bite-sized pieces and add them in. Leave the crockpot on low for about 6 hours. Place the chicken on top of white rice and you’re done. If you don’t own a crockpot, you could always just sautee the ingredients in a skillet.

6. Cajun Chicken Pasta

This pasta recipe can be adjusted based on your preference. You can swap the chicken for shrimp, make it extra spicy or extra creamy. Sautee cubed chicken in homemade Cajun seasoning, then add diced yellow onions and pasta. Finally, add chunks of cream cheese into the pan until it’s fully melted. Top with green onions before serving.
