Summertime is upon us and that means it’s time to start making some delicious and refreshing summer foods. If you’re vegan, plant based, or just trying to eat a little bit healthier, these vegan recipes are great to make and share among the whole family!
1. Vegan Thai Summer Rolls
This recipe from @earthyandy is perfect for the summertime, as it’s all made with fresh and cool ingredients that will be refreshing for the whole family! The ingredients you will need for these tasty rolls include:
- Rice Paper Wrappers (8 for the following amounts)
- Your Favorite Torn Leafy Greens
- 1 Medium Cucumber
- 2 Medium Carrots
- 1/4 Small Red Cabbage
- Fresh Mint OR Thai Basil
- 1 Avocado
- 1 Mango
- 2-3 Green Onions
- Crushed Peanuts (for topping)

The next on our list of summer vegan recipes is a healthy version of chili cheese fries that the whole family will love! Choosing to eat in a healthier way doesn’t mean you have to miss out on classic recipes that you enjoy.

3. Tasty Vegan Veggie Burgers
This is one of my personal favorite summer vegan recipes and I hope it will be one of yours too. This recipe is amazing because you can make it the day of, or even make it in advance and save it for later, which is perfect for families!

4. Refreshing Lemon Juice Pepper Pasta
Next on our list of vegan recipes is a refreshing lemon juice pepper pasta. This recipe is great because it will be ready for the whole family in under 30 minutes, and it only includes a few ingredients!
- Fresh Lemons (1/4 of a large lemon’s juice per serving)
- Vegan Spaghetti Noodles
- Fresh Tomatoes
- Chili Flakes
- Avocado Oil
- Optional Vegan Feta
First you will want to boil hot salted water for the noodles. While that is heating up, you will chop your asparagus into bite-sized pieces and put it in a pan with a little water on medium heat. Cover the pan and let the asparagus start to heat up.
Then you will add your noodles to the boiling water and let them cook while you begin to season your asparagus with salt, pepper, paprika, and some fresh garlic or garlic powder. If you like your asparagus to get a bit crispy, then just add a bit of avocado oil in and let them continue to cook (uncovered).
When the noodles are done cooking you will want to make a space in the center of your pan with the asparagus out to the sides. Next add a little avocado oil, your noodles, and a few chopped up tomatoes. Add as much chili flakes as you would like and then add your lemon juice and salt to taste.
Finally you can mix it all together and serve, seasoned to your liking. Add some vegan feta if you would like as well. This summer recipe is light and refreshing, and it is perfect for a family lunch or even dinner together!
5. Creamy Stir Fry Noodles
This next delicious summer vegan recipe is also from @ellenfisher. The tasty secret sauce is packed with nutritious veggies like bell peppers, mushrooms, tomatoes, carrots, and zucchinis!

6. Buddha/Nourish Bowl
Buddha bowls are a great option for family vegan recipes because each member of the family can pick which ingredients they do or don’t want in their bowl! All you need to do is prepare a bunch of your favorite healthy ingredients.
Buddha bowls usually contain some kind of leafy green, maybe chickpeas or potatoes, sprouts, avocados, tempeh, brown or white rice, or really whatever you’d like!
Typically they are served cold, so this recipe is perfect for your family on a hot summer’s day. Although you can make it a nourish bowl and heat some ingredients like the rice or potatoes if you would like!
7. Avocado Soup With Cashew Cilantro Sour Cream
If your family loves avocados, then the next stop on our list of vegan recipes is perfect for you! This creamy avocado soup recipe by @earthyandy is perfect for a light lunch with your family. It’s also super healthy!

8. Smoothie Bowls
Smoothie bowls are one of the sweeter summer vegan recipes. It’s perfect for you and your family anytime, especially after a fun day at the pool or just relaxing on a hot summer’s day!
The base ingredients are frozen bananas and frozen blueberries. If you have those two things alone, you can make a delicious smoothie bowl, but you can add even more ingredients like mangos, acai, strawberries, etc.
Blend it all together in your favorite blender and then top your bowl with some granola or sliced bananas. Even a scoop of almond butter, cacao nibs, or a dash of shredded coconut would be amazing!
