5 Delicious Cookie Recipes to Share With Your Roommates

Who doesn’t love cookies? They’re easy, quick to make, and delicious. Baked goods are an amazingly thoughtful gesture, so here are 5 delicious cookie recipes to share with your roommates. (or eat them all yourself.)

1. Chocolate Chip Cookies. 

Our first cookie recipe is the most classic of classics, the one most people think of when they think “cookie.” There are MANY variants of this recipe, largely because you can swap out chocolate chips for a bunch of different candies or other add-ins. 

  • Ingredients:
    • 1/2 cup (1 stick) unsalted butter
    • 3/4 cup packed dark brown sugar
    • 3/4 cup sugar
    • 1  teaspoon pure vanilla extract
    • 1  (12-ounce) bag semisweet chocolate chips, or chunks
    • 2 1/4 cups all-purpose flour
    • 3/4 teaspoon baking soda
    • 1 teaspoon fine salt
  • Directions: 
    • Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
    • Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
    • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.
    • Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.

2. Peanut Butter Cookies.

Our second cookie recipe is another classic. Peanut butter cookies can be a little divisive to some people, but I personally think they’re great. This recipe can take a little while because the dough has to chill before baking. 

  • Ingredients:
    • cup unsalted butter
    • cup crunchy peanut butter
    • 1 cup white sugar
    • 1 cup packed brown sugar
    • 2 large eggs
    • 2 ½ cups all-purpose flour
    • 1 ½ teaspoons baking soda
    • 1 teaspoon baking powder
    • ½ teaspoon salt
  • Directions:
    • Beat butter, peanut butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth; beat in eggs.
    • Sift flour, baking soda, baking powder, and salt into a separate bowl; stir into butter mixture until dough is just combined. Chill cookie dough in the refrigerator for 1 hour.
    • Preheat the oven to 375 degrees F (190 degrees C).
    • Roll dough into 1-inch balls and place 2 inches apart onto ungreased baking sheets. Flatten each ball with a fork, making a crisscross pattern.
    • Bake in the preheated oven until edges are golden, about 10 minutes. Cool on the baking sheets briefly before removing to a wire rack to cool completely.

3. Snickerdoodles. 

For cookie recipe number 3 we have Snickerdoodles. Why these cinnamon-sugar cookies have the name they do is one of life’s great mysteries. What isn’t a mystery is how delicious they are. If you want to try something new, give this cookie recipe a try.

  • Ingredients (Cookies):
    • 1 ½ cups white sugar
    • ½ cup butter, softened
    • ½ cup shortening
    • large eggs
    • teaspoons vanilla extract
    • 2 ¾ cups all-purpose flour
    • teaspoons cream of tartar
    • teaspoon baking soda
    • ¼ teaspoon salt
  • Ingredients (Cinnamon Coating)
    • tablespoons white sugar
    • teaspoons ground cinnamon
  • Directions: 
    • Preheat the oven to 400 degrees F (200 degrees C)
    • Make cookies: Beat sugar, butter, shortening, eggs, and vanilla in a large bowl until smooth and creamy.
    • Whisk flour, cream of tartar, baking soda, and salt together in a separate bowl. Gradually mix dry ingredients mixture into the wet ingredients just until combined. Shape dough into walnut-sized balls.
    • Make cinnamon-sugar: Combine sugar and cinnamon in a small bowl or zip-top plastic bag.
    • Place dough balls in cinnamon-sugar and roll or shake until coated. Place 2 inches apart on ungreased baking sheets.
    • Bake in the preheated oven until set but not too hard, 8 to 10 minutes, switching racks halfway through
    • Remove from the oven and immediately transfer to wire racks to cool.

4. Oatmeal Raisin Cookies. 

This cookie recipe is probably the most divisive on our list. People either love or absolutely despise oatmeal raisin cookies. It’s really weird. Regardless of your feelings on these cookies, the recipe goes like this.

  • Ingredients:
    • 1 cup (2 sticks) unsalted butter, softened, OR 1 cup shortening
    • 1 cup brown sugar (light or dark), packed
    • 1/2 cup plus 2 tablespoons (10 tablespoons) granulated sugar
    • 2 large eggs
    • 1 tablespoon vanilla extract
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon freshly grated nutmeg
    • 1 1/2 cups raisins
    • 1/2 cup chopped walnuts, optional
    • 3 cups rolled oats (old-fashioned or quick; do NOT use instant)
  • Directions:
    • Preheat the oven to 350°F. Grease 2 large cookie sheets or line with Silpat or parchment paper.
    • In a large mixing bowl, beat the butter until creamy. Add the brown sugar and white sugar and beat until fluffy, about 3 minutes. Beat in the eggs one at a time. Add the vanilla extract.
    • Mix the flour, salt, baking soda, cinnamon, and nutmeg together in medium bowl. Stir the dry ingredients into the butter-sugar mixture. Stir in the raisins and nuts. Stir in the oats.
    • Spoon out the dough by large tablespoonfuls onto the prepared cookie sheets, leaving at least 2 inches between each cookie.
    • Bake until the edges of the cookies turn golden brown, about 10 to 12 minutes. If baking 2 cookie sheets at once, swap their positions on the racks mid-bake. Note that the cookies will seem underdone and lightly colored everywhere but the edges. That’s okay, they will firm up as they cool. Repeat with the remaining cookie dough.
    • Cool 1 minute on the cookie sheets. Then carefully remove them, using a metal spatula, to a wire rack. Cool completely. They will be quite soft until completely cooled. Store tightly covered at room temperature for up to 5 days.

5. Sugar Cookies. 

The last of our cookie recipes is the humble Sugar Cookie. It’s probably the most basic cookie recipe on the list. If you’re capable of reading this I’m gonna assume you know what a sugar cookie is. 

  • Ingredients:
    • 2 ¾ cups all-purpose flour
    • teaspoon baking soda
    • ½ teaspoon baking powder
    • cup butter, softened
    • 1 ½ cups white sugar
    • egg
    • teaspoon vanilla extract
  • Directions: 
    • Preheat the oven to 375 degrees F (190 degrees C).
    • Stir flour, baking soda, and baking powder together in a small bowl.
    • Beat sugar and butter together in a large bowl with an electric mixer until smooth. Beat in egg and vanilla. Gradually blend in flour mixture. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
