Everyone knows breakfast is the most important meal of the day, which is why I’ve decided to compile my favourite easy breakfast ideas! I’ve never been an early riser per se. I’m a total night owl, and for that reason, I’ve never been into breakfasts. If I have to be somewhere at 8AM, my priority is generally to make sure I can sleep until the very last minute before I actually have to get dressed etc to leave. The idea of waking up an hour earlier to make breakfast?

Sure, some people enjoy waking up three or four hours before they have to, just for the sake it. They go to the gym, or for a jog, they make themselves a gourmet breakfast, watch TV, walk their dogs etc. etc. etc. And that’s GREAT for them.

It’s not my thing, though. It will never be my thing. Not today. Not tomorrow. Not ever.

That said, the fact that I enjoy sleeping in as much as I possibly can shouldn’t come in the way of me having breakfast. Why? Because I would be fooling myself if I said that when I leave in the morning without eating anything, I know for sure I’ll be having lunch outside. NOPE. Quite often when I’m out, for budget reasons (and sometimes for busy reasons), I hardly ever have lunch. That’s why I’ve realized these past few months how important a good breakfast is. If all I eat all day ends up being breakfast, a snack and dinner — my mood throughout the day will REALLY depend on whether I’ve got food on my stomach or not. Hence my newfound love for EASY BREAKFAST IDEAS, which I’m very excited to share with you!


Make-Ahead

Meal prepping is something I enjoy, but I’m not always loyal to. Lately, every other month I get down to meal prepping some of these make-ahead easy breakfast ideas. The reason I do it every other month is that it’s easier for me to take up one Sunday afternoon dedicated to bulk-prepping two of my favourite freezer-friendly easy breakfast ideas, some breakfast burritos and some egg white muffins. These usually last me about two months, because I like to think of them as my back-up emergency easy breakfast, for the days I either don’t feel like making breakfast or find myself out of groceries. Some of my other favourite make-ahead easy breakfast ideas are also for overnight oats. You can prep them days in advance and just leave them ready to go in the fridge! Plus, they’re delicious!

If you decide to give these make-ahead recipes a try, I strongly suggest prepping ALL THREE in the same day. Trust me, I won’t take you much longer than 90 minutes to prep freezer burritos, freezer egg muffins, AND have your next 7 days of breakfast prepared with the overnight oats. Again, trust me, it’s worth it! In 90 minutes, you will have a full week of breakfast ready, plus one-two months of backups!

Freezer Breakfast Burritos

Here’s what you need: eggs, milk, salt and pepper, olive oil, white onion, gold or red potatoes, red bell pepper, a can of Old El Paso chopped green chiles, ground cumin, a can of black beans, two packages of flour tortillas, cheese and (optional) salsa.

Freezer-Friendly Egg White Muffins

Here’s what you need: egg whites, fresh spinach, cherry tomatoes, mushrooms, shredded cheddar cheese, fresh chives, and avocado

Overnight Oats

Here’s what you need: 8 yogurts cups, rolled oats, brown sugar, milk, a bunch of nuts/seeds of your choosing, and a bunch of fruits of your choosing.
