If you will ask me what I would want to eat for brunch every single day, I would simply reply with one word – casserole. Seriously, is there anything better on this planet than a breakfast casserole? Whether you are going out for a brunch with your pals, enjoy it at home with your family and loved ones or simply want to treat yourself just because you want to – we fully support it, and for this reason, we have gathered a couple of easy breakfast casserole recipes that will perfect for every brunch.

1. Breakfast Egg Bake with Chicken Sausage

  • Total cook time: 60 mins
  • Prep:15 mins
  • Yield:4 to 6 servings

Ingredients

  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon chicken grill seasoning, Creole seasoning, or a seasoned salt mixture
  • 3 slices bread, torn into small pieces
  • 12 ounces chicken smoked sausage, your favorite flavors
  • 1 cup sharp Cheddar cheese

Steps to Make It

  1. Gather the ingredients.
  2. Grease a 2-quart baking dish or spray with nonstick cooking spray.
  3. Whisk together the eggs, milk, and seasoning.
  4. Arrange bread pieces in the baking dish; top with the sliced sausage then cheese.
  5. Cover and refrigerate overnight or let stand for 15 minutes and bake. If you refrigerate overnight, give the casserole about 20 to 30 minutes to come to room temperature before baking.
  6. Bake, uncovered, at 350° for 40 to 50 minutes, until firm and lightly browned around the edges.

2. Savory Sausage and Egg Breakfast Casserole

  • Total cook time: 60 mins

  • Yield: 8 servings

Ingredients

  • 6 slices bread (cubed)
  • 1 pound sausage (browned, drained)
  • 1 1/2 cups cheddar cheese (shredded)
  • 8 eggs (beaten)
  • 2 cups milk
  • 1 teaspoon salt
  • Pepper to taste

Steps to Make It

  1. Butter a 9-by-13-inch baking dish. Heat the oven to  325 F (165 C/Gas 3).
  2. Cube bread and place evenly in the prepared baking dish. Sprinkle evenly with sausage and cheese.
  3. In a bowl, whisk the eggs with the milk, salt, and pepper. Pour over the layers in the pan.
  4. Bake 45 minutes or until set. Cut into squares to serve.
  5. This casserole may also be prepared the night before. Just cover and refrigerate the unbaked casserole. Take it out of the refrigerator about 15 minutes before baking time; bake as directed

3. Spicy Chorizo Sweet Potato Breakfast Casserole

  • Total:40 mins
  • Prep:10 mins
  • Cook:30 mins
  • Yield: 8 servings

Ingredients

  • 1 package of sweet potato tater tots (at room temperature) (or about 4 cups of shredded and steamed sweet potatoes)
  • 3 chorizo sausages (casings removed or 1/2 lb. bulk chorizo sausage)
  • 4 eggs (beaten)
  • 1/3 cup whole milk
  • 1 teaspoon chili powder
  • 2 teaspoons onion powder
  • 1 teaspoon of salt
  • 1 teaspoon of freshly ground pepper
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup scallions (chopped)
  • 1 Tablespoon Sriracha hot sauce

Steps to Make It

  1. Layer the tater tots in a greased 9×9 baking dish.  Preheat the oven to 375 degrees.
  2. Cook the chorizo sausage in a saute pan, breaking it into small pieces as it cooks.
  3. Beat the egg together with the milk, salt and pepper, chili powder, and onion powder.
  4. Pour the egg mixture over the tater tots.  Top the eggs with the cooked chorizo sausage.  Make sure to drain the fat off of the chorizo sausage before transferring.
  5. Bake the casserole for 25 minutes, uncovered until the egg is cooked and the edges are golden brown.
  6. Top the casserole with the cheddar cheese and bake for another 5-7 minutes until the cheese is melted and bubbly!
  7. Drizzle the casserole with the hot sauce and sprinkle the chopped scallions on top!
  8. Serve immediately.
