15 Bubbly Drinks For Your New Years Eve Extravaganza

Your New Year’s Eve extravaganza is going to be litty AF this year because you’re going to make 15 drinks that will blow your guests minds and taste buds away! Everyone is going to be asking for the recipes of these drinks and you’ll proudly share where you go it from with them. Here are 15 bubbly drinks for your New Year’s Eve extravaganza!

1. Campari Spritz

INGREDIENTS

2 oz. Campari

3 oz. dry sparkling rosé

Splash of lemon soda

1 lemon wheel

RECIPE PREPARATION

Pour the Campari and rosé into a glass filled with ice. Top off with soda and stir it to blend the flavors. Add lemon wheel to garnish, or squeeze in!

2. Champagne Cocktail

INGREDIENTS

1 teaspoon granulated sugar or 1 sugar cube

3–5 dashes bitters (such as Angostura)

4 ounces Champagne or sparkling dry wine

Long spiral lemon zest (for serving)

RECIPE PREPARATION

Combine sugar and bitters in a Champagne flute. Add a bit of Champagne and stir gently to combine. Pour in remaining Champagne; garnish with lemon zest.

3. Sparkling Julep

INGREDIENTS

6 mint leaves, plus sprig for serving

¾ ounce simple syrup

3 ounces Champagne or dry sparkling wine

½ ounce cognac

1 dash bitters (such as Angostura)

Lemon twist (for serving)

RECIPE PREPARATION

Add mint leaves and simple syrup in a julep cup or rocks glass. Add Champagne, cognac, and bitters. Fill glass partway with crushed ice and stir gently to mix. Add more crushed ice on top and garnish with a mint sprig and a lemon twist.

4. Sparkling Lemon Cocktail

INGREDIENTS

2 Meyer or regular lemons, thinly sliced into rounds, seeds removed

8 sugar cubes

1½ teaspoons Angostura bitters

2 750 ml bottles dry Prosecco or other sparkling wine, chilled

RECIPE PREPARATION

Muddle lemons, sugar cubes, and bitters in a large measuring glass until lemon slices are softened and sugar is crushed. Divide mixture among 8 wine glasses; fill glasses with Prosecco, pouring very slowly.

5. Spiced Cherry Spritz

INGREDIENTS

2 oz. amaro (such as Nonino)

3 oz. Lambrusco

Cherry soda (for serving)

1 maraschino cherry

RECIPE PREPARATION

Pour amaro and Lambrusco into a rocks glass filled with ice. Top off with a splash of soda, stir gently to combine, and garnish with cherry.

6. Hard Cider Spritz

INGREDIENTS

16 ounces dry hard cider

6 ounces apple cider

2 ounces rye whiskey

1 ounce Aperol

1 ounce fresh lemon juice

Club soda (for serving)

Apple slices (for garnish)

RECIPE PREPARATION

For each cocktail, pour 4 oz. hard cider, 1½ oz. apple cider, ½ oz. rye whiskey, ¼ oz. Aperol, and ¼ oz. lemon juice into a rocks glass filled with ice. Top off with club soda. Gently stir to combine and garnish with an apple slice.

7. Pimm’s Spritz

INGREDIENTS

2 oz. Pimm’s No. 1

3 oz. Prosecco

Splash of Dr. Brown’s Cel-Ray soda

1 sprig celery leaves

RECIPE PREPARATION

Pour Pimm’s and Prosecco into a rocks glass filled with ice. Top off with soda, stir gently to combine, and garnish with celery leaves.

8. Cynar Spritz

INGREDIENTS

2 oz. Cynar

3 oz. Prosecco

Splash of grapefruit soda

1 2×1″ grapefruit zest (for serving)

RECIPE PREPARATION

Pour Cynar and Prosecco into a rocks glass filled with ice. Top off with soda, stir gently to combine, and garnish with grapefruit zest.

9. Build A Spritz

INGREDIENTS

1½ ounces Suze

1 ounce club soda

1 ounce fresh orange juice

3 ounces Champagne or dry sparkling wine

Orange wheel and sage sprig (for serving)

RECIPE PREPARATION

Combine Suze, club soda, and orange juice in an ice-filled rocks glass. Stir gently to combine. Top with Champagne; garnish with an orange wheel and a sage sprig.

10. Ginger Spritz

INGREDIENTS

1 thin slice peeled ginger

2 oz. Lillet

3 oz. cava

Splash of ginger beer

RECIPE PREPARATION

Place ginger slice against the inside of a rocks glass, fill with ice, and add Lillet and cava. Top off with ginger beer and stir gently to combine.

11. Fall Spritz

INGREDIENTS

1.5 oz. Averna amaro

6 oz. Basque-style dry hard cider (such as Isastegi Sagardo)

Orange twist (for serving)

12. Sparkling Grapefruit Cocktail

INGREDIENTS

1 large ruby red or pink grapefruit

¼ cup sugar

2 ounces gin (preferably Hendricks)

½ ounce fresh lemon juice

1 sprig tarragon

2 ounces French sparkling wine (such as Crémant de Bourgogne)

Ruby red or pink grapefruit wedge (for serving)

RECIPE PREPARATION

Remove zest, along with some of the white pith, from grapefruit in wide strips with a vegetable peeler. Bring sugar and ¼ cup water to a boil in a small saucepan, swirling constantly, until sugar dissolves. Remove from heat and add grapefruit zest, pushing down to submerge. Let sit 30 minutes, then strain through a fine-mesh sieve into a measuring cup.

Combine gin, lemon juice, tarragon, and ½ ounce syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds.

Strain cocktail into an old-fashioned or rocks glass filled with ice. Top with sparkling wine and garnish with grapefruit wedge.

13. Sparkling Tarragon Gin Lemonade

INGREDIENTS

10 large sprigs tarragon

2 lemons, thinly sliced

2 tablespoons sugar

3/4 cup gin

3/4 cup St-Germain (elderflower liqueur)

1/3 cup fresh lemon juice

1 12-ounce can club soda

RECIPE PREPARATION

Muddle tarragon sprigs, lemon slices, and sugar in a large pitcher. Add gin, St-Germain, lemon juice, and club soda. Add ice and stir to combine. Serve over ice.

14. Rose-Aperol Spritz

INGREDIENTS

¾ cup passion fruit juice, chilled

¼ cup Aperol

¼ cup fresh lime juice

4 teaspoons sugar

1 750ml bottle sparkling rosé, chilled

Ruby red grapefruit wedges (for serving)

RECIPE PREPARATION

Whisk passion fruit juice, Aperol, lime juice, and sugar in a large pitcher until sugar is dissolved. Stir in rosé. Serve spritz in large ice-filled wine glasses. Garnish with a grapefruit wedge.

15. 522 North Pinckney Cocktail

INGREDIENTS

2 cups fresh pink grapefruit juice (from 2-3 grapefruits)

1/2 cup St-Germain (elderflower liqueur)

1/4 cup Campari

1 750-ml. bottle chilled sparkling wine

RECIPE PREPARATION

Combine grapefruit juice, St-Germain, and Campari in a large pitcher. Cover and chill until cold, about 2 hours. Divide grapefruit mixture among glasses and top off with sparkling wine.

DO AHEAD: Grapefruit mixture can be made 1 day ahead. Keep chilled.
