10 Delicious Yet Simple Lunch Recipes You Need To Try

Lunch can be one of the tastiest meals of your day, however it can sometimes be tricky to find the time to create something delicious and nutritious! With these 10 quick and simple lunch recipes, you’ll always have the lunch that everyone around you envy’s!

1- Chickpea and Four Bean Salad

This is a super great summer salad recipe that will make your insides feel happy as can be! It is so easy to make and is definitely one of my go-to lunch recipes if I am in a rush and need something quick, easy and healthy!

  • 250g of chickpeas
  • 250g of four bean mix
  • 2 handfuls of spinach
  • An avocado
  • Cucumber
  • Tomato
  • Squeeze of lemon juice (to taste)
  • Salt and pepper (to taste)
  • Feta (Optional)

Method:

1- Wash chickpeas and four bean mix (if using them from a can), mix together in a large bowl.
2- Add spinach to bowl.
3- Chop up cucumber and tomato and add to bowl.
4- Mix all ingredients all together in the large bowl.
5- Add avocado and lemon juice and mix further.
6- Add salt and pepper to taste. Add feta to the mix (optional).

Basically all you have to do is wash your chickpeas and four bean mix (if using them from a can) and mix them together with spinach in a large bowl. Add your avocado to the bowl and mix further, adding lemon juice and salt and pepper as you need!

Tip: Try this salad warm by cooking the chickpeas, beans and spinach on a fry pan!

2- Sweet Potato Smash

For this one you’ll need a whole sweet potato (or half a one deepening on how big the potato is and how big your appetite is), cooked rice, avocado, spinach and balsamic dressing! This recipe is so ridiculously easy and will leave you feeling fuller for longer.

Method:
1- Cut your cooked sweet potato in half and scoop some of the guts of the potato out so there is room for rice.  (You can cook your sweet potato in the microwave for around 5 minutes)
2- Next, mix your sweet potato insides with your cooked rice and rice
3- Stuff the sweet potato with the rice mix that you just made.
4- Smash up some avocado and put on top of your sweet potato
5- Use balsamic dressing for extra taste.

As you can see, this recipe is super easy to make and tastes amazing and packs a nutritional punch! Tip: Try swapping out rice for quinoa for a different taste and texture.

3- Flatbread/Pita Bread pizza

The great thing about flatbread pizza is that it is simple to make, you can put whatever toppings on it that you like and it takes no time at all because both flatbread and pita bread cooks fast!

4- Bahn Mi Sliders

Bahn Mi’s taste incredible and fresh and are surprisingly easy to make!
If you start off the week by cooking a whole heap of chicken and leaving it in the fridge for easy access, you will save even more time when preparing your lunch meals.

5- Lunch Quesadilla

This is a super fun and tasty lunch that’ll make you want seconds, thirds and fourths!

Its super easy to make and you can alter the recipe anyway that you like. For this recipe I have created a mushroom and onion quesadilla but you can definitely add some chicken or any other meat to the mix too.

Ingredients:

  • Refried Beans
  • Avocado
  • Onion
  • Mushroom
  • Smoked Paprika
  • Meat of Choice
  • Cheese
  • Tomato
  • Tortillas

Method: 

1- If using meat, fry up your meat of choice in a little bit of oil- add whatever spices you like in order to give the meat a bit of flavour.
2- Sauté Onion and Mushroom together in a fry pan. Sprinkle some paprika to give a little bit of extra flavour.
3- Cut Tortilla in half and fold over to make a triangle shape.
4- Spread refried beans on tortilla and sprinkle meat and/or vegetable mix on one half of tortilla.
5- Add tomato and cheese in to the tortilla and fold over.
6- Toast just before serving.
7- Top with smashed avocado for extra flavour!

This easy to make quesadilla is super tasty and can be altered to exactly how you like it!

6-  Tuna Salad Bowl

Tuna is a tasty food that packs a lot of nutrients and flavour. Canned tuna can be flavoured with the tuna itself being in all different types of sauces such as savoury tomato and onion. For this recipe you can use whatever tuna you like, try tuna in springwater for a more plain and refreshing tasting salad, or tuna in chilli sauce to add a bit of kick- the choice is yours!

  • Canned tuna of choice
  • Iceberg lettuce
  • Spinach
  • Tomato
  • Asparagus
  • Chickpeas
  • Avocado
  • Cucumber

Method: 

1- Drain the tuna from the can (if using springwater tuna).
2- Drain chickpeas (if using chickpeas from a can).
3- Chop up all of your salad ingredients.
4- Chargrill asparagus for 1 minute on fry pan or place in microwave with water for 30 seconds or until soft.
5- Toss all salad ingredients together and garnish to taste with salt, pepper and any sauce of choice.

7- Asian Vermicelli Noodle Salad

The best thing about this vermicelli noodle salad is how fresh it is. This salad will make you feel good from the inside out and will leave you feeling full and satisfied. Vermicelli noodles take no time at all to make and the vegetables in the salad can be eaten raw.

8- Chicken and Avocado Toastie

There really isn’t anything better than a damn good toastie. You can have this one fresh or toasted depending on what you feel like at the time!

Ingredients: 

  • Ciabatta Bread
  • Chicken Breast
  • Aioli
  • Avocado
  • Cheese
  • Spinach
  • Pepper

Method: 

1- Stir aioli through chicken until chicken breast is coated. Add pepper to taste.
2- Cut avocado and spread on one half of the ciabatta bread.
3- Place sliced cheese on the bread (one or two slices depending on how much cheese you would like)
4- Place chicken and aioli mix on bread.
5- Place spinach on the sandwich.
6- Fold over to make a sandwich and toast for 3 minutes (if toasting).

9- Minute Steak Sanga

This steak sandwich is surprisingly quick to make and tastes absolutely divine!
You can certainly change up the salads that you want on this sandwich and even add an egg for an extra burst of flavour!

  • Crusty Baguette
  • 1 Minute Steak (Can purchase these from Foodland)
  • Iceberg Lettuce
  • Tomato
  • Cucumber
  • Caramelised Onion and Mushrooms
  • Aioli/Tomato/BBQ Sauce or any sauce of choice

Method: 

1- Cook up 1 minute steak
2- Cut up onion and mushroom and and sauté in a pan until caramelised
3- Toast baguette slightly until crispy
4- Place salads and steak on crispy bread
5- Squeeze on sauce of choice

Ah yes, the infamous leftovers. These actually make really great next day lunches and the preparation time is simply just reheating your container in the microwave! Simple and super delicious! Your leftovers could be anything from noodles, pasta to curry.
