Amazing Vegan Cookie Recipes You Must Try

Cookies are delicious, but vegan cookies can be even better! If you do it right they can taste just as good as a non-vegan buttery cookie, and they’re healthier for you. Here are some amazing vegan cookie recipes you must try!

1. Classic Vegan Chocolate Chip Cookies

First, on our little list of vegan cookie recipes are some delicious chocolate chip cookies by Simply Sweet Vegan. Chocolate chip cookies are a staple cookie to enjoy, and these ones will blow your mind! They’re the perfect amount of sweet, chewy, and chocolaty! Here’s what you’ll need for about 3 dozen cookies:

  • 3/4 Cup Refined Coconut Oil (melted* see recipe notes)
  • 3/4 Cup Organic Granulated Sugar
  • 3/4 Cup Organic Brown Sugar (packed)
  • 1/2 Cup Unsweetened Applesauce
  • 2 Tsp Vanilla
  • 2,1/2 Cups All-Purpose Flour (see recipe notes for GF option)
  • 1 Tsp Baking Soda
  • 1 Tsp Salt
  • 1/2 Tsp Baking Powder
  • 1,1/4 Cups Vegan Chocolate Chips
  • Optional: Almond (or any plant-based) Milk For Dipping!

2. Double Chocolate Vegan Cookies

Next up is a vegan recipe for tasty double chocolate cookies. These are for all the chocolate-loving people out there! These cookies are amazing and just looking at them will make your mouth water. They’re chewy and crunchy all at the same time and after having one you won’t be able to put the rest away until you’ve eaten them all! Here’s what you’ll need for about 16 cookies:

  • 1/2 Cup (112g) Vegan Butter
  • 1/2 Cup (100g) White Sugar
  • 1/2 Cup (100g) Brown Sugar
  • 1 Tsp Vanilla Extract
  • 1 Cup (125g) All-Purpose Flour
  • 2/3 Cup (56g) Unsweetened Cocoa Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 Tbsp Soy Milk (or any plant-based/non-dairy milk)
  • 3.5 Oz (100g) Vegan Dark Chocolate + More For Topping (chopped into chunks)

3. Healthy Blueberry Muffin Breakfast Cookies

Next on our list of vegan cookie recipes are some sweet treats that are perfect for a yummy breakfast or a healthy snack during the day! These blueberry muffin breakfast cookies by Minimalist Baker are so flavorful and they’re baked to perfection. Not to mention, they’re super healthy too! Here’s what you’ll need for about 2 dozen cookies:

  • 2 Batches Flax Eggs (2 tbsp flaxseed meal + 5 tbsp water – see recipe for more info on flax eggs)
  • 1 Medium to Large Ripe Banana (mashed, 1 banana would be 1/2 when mashed)
  • 1/3 Cup Unsweetened Applesauce
  • 1/2 Cup Almond Butter or Peanut Butter (you can also mix them, half and half)
  • 1 Tsp Pure Vanilla Extract
  • 2 Tbsp Melted Coconut Oil
  • 3 Tbsp Maple Syrup or Agave Nectar
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1 Pinch Sea Salt
  • 1, 1/2 Cups GF Rolled Oats
  • 1/2 Cup Almond Meal
  • 1/2 Cup GF Oat Flour
  • 3 Tbsp Chopped Walnuts or Pecans
  • 1/2 Cup Dried Blueberries (or other dried fruits + more for topping)

4. Cozy Vegan Shortbread Cookies

These shortbread cookies only have 4 ingredients and they’re perfect to make and have some extras on hand. This recipe is for a small batch, but you can easily double or triple the ingredients to make as many cookies as you’d like. Here’s what you’ll need for about 9 cookies:

  • 1 Cup (125g) All-Purpose Flour
  • 1/4 Cup (50g) Sugar
  • 1/4 Tsp Salt
  • 1/2 Cup (112g) Vegan Butter/Margarine

5. Vegan Snickerdoodles, “Soft, thick & puffy”

  • 1 Tbsp Pure Vanilla Extract
  • 2, 3/4 Cups All-Purpose Flour
  • 2 Tsp Cream of Tartar
  • 1 Tsp Baking Soda
  • 1, 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Salt

For Topping:

  • 1/2 Cup Granulated Sugar
  • 1, 1/2 Tsp Ground Cinnamon
