Pumpkin Mug Cake

This pumpkin mug cake is somewhere between pumpkin pie and pumpkin bread. It is not as smooth and creamy as pumpkin pie, but not as light and airy as pumpkin bread or cupcakes. It is, however, delicious and satisfies any pumpkin addiction you may have. You can top it off with whipped cream and a little bit of cinnamon. Enjoy this tasty treat right when you pull it out of the microwave, so the whipped cream starts melting, or you can wait for it to cool (if you have that kind of patience).

Ingredients
  • 2 tablespoons flour
  • 1 tablespoon sugar
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon baking powder
  • 1 tablespoon canola oil
  • 1 tablespoon milk
  • 2 tablespoons packed pumpkin
Directions

In a small mug, mix all dry ingredients then the wet ingredients. Mix well. Microwave for 50 seconds to 1 minute.

  • 2 tablespoons peanut butter

  • 2 tablespoons honey
  • 1 tablespoon special dark cocoa powder
  • 1 ½ tablespoons gluten free oat flour
  • ½ teaspoon coconut flour
  • ¼ teaspoon baking powder
  • 1 whole egg
  • 1.5 tablespoons dairy free chocolate chips
  • 1/8 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
Directions

Melt the peanut butter in a mug for 30-35 seconds, or until you achieve a melted consistency. Then combine remaining ingredients in the same mug and stir well; microwave for 90 seconds.

Salted Caramel Apple Spice Mug Cake

Moist, fluffy, and the best kind of dessert ever! I think this is by far my favorite recipe; mostly because of the salted caramel. It tastes amazing! This batter is moister than other mug cakes, hence the longer cook time. If you feel that your batter is still too wet after 1 minute and 50 seconds, feel free to heat it a little longer. There are no eggs in this recipe either – vegans rejoice! Eggs are what make typical mug cakes spongy! This mug cake takes a total of 3 minutes to cook, 1 minute for prep and 2 minutes for cook time.

Ingredients
  • ¼ cup all-purpose flour
  • ½ teaspoon apple pie spice
  • ½ teaspoon baking powder
  • 3 tablespoons granulated sugar
  • Pinch of salt
  • 1 ½ tablespoons unsweetened applesauce

In a semi-deep non-stick pot, heat sugar over medium high heat, stirring often. The sugar will break down into a liquid, whisk constantly to get rid of the clumps. Continue to stir and heat it up to 350 degrees Fahrenheit. Add the butter and continue to stir until all butter has melted. Carefully add the heavy cream and stir the mixture. Let boil for 3 minutes. Remove from heat, stir in the salt and let is cool completely before topping off your mug cake.

5 minute Chocolate Fudge S’mores Mug Cake

There isn’t anything in this world that beat s’mores, except maybe a s’mores mug cake! Warning: the final result will be VERY fudgey. This may be hard to make the first couple of tries because the consistency is difficult to achieve. However, in minutes, with a few tweaks and twists, I have no doubt you can make this delicious mug cake too.

  • 2 – 3 tablespoons graham cracker crumbs
  • 3 ½ tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup whole wheat pastry flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 1 ½ ounces milk chocolate (chopped or morsels)
  • Marshmallow fluff, cream or actual marshmallows
Directions

Combine 3 tablespoons butter and 1 ounce of chocolate in a small bowl, and then heat it in the microwave for 20-30 seconds. Put it aside. In another bowl, combine remaining melted butter with 2-3 tablespoons of graham cracker crumbs and stir until moistened. Press graham crumbs into the bottom of the mug. In a bowl whisk egg, sugar and vanilla until smooth. Add in flour, baking powder, salt and cocoa; stir until a thick batter forms. Put in the melted butter and chocolate, mix well. Fold in remaining chocolate chips. Add half of the mixture on top of the graham crust, then a scoop of marshmallow cream or a few marshmallows. Add remaining batter on top. Microwave for 1 to almost 2 minutes. Remove and add more marshmallow if you want.

  • 1 ½ tablespoon cream cheese, softened
  • 4 tablespoon powdered sugar
Frosting Directions

Mix in a small bowl using a fork and set aside until ready to pour over your mug cake!
